Full-Time About Hola Aloha Hola Aloha is a new chef-driven restaurant blending the bold flavors and traditions of Mexico and Hawaii. Our menu is built around exceptional ingredients and strong technique — fresh seafood and crudos, handmade salsas and tortillas, tropical chiles and citrus, slow-cooked meats, live-fire cooking, and vibrant, shareable plates. We are seeking an experienced, hands-on Chef de Cuisine to join our opening leadership team and help build the restaurant from the ground up. Working closely with the Executive Chef and ownership, you will help shape the menu, build the BOH team, establish kitchen systems, and lead daily execution. Responsibilities- Finalize, test, and refine the opening menu
- Develop dishes across Mexican and Hawaiian/Pacific flavors
- Establish recipes, portions, plating, and quality standards
- Recruit, train, schedule, and lead the BOH team
- Lead daily prep, production, and high-volume service
- Maintain food quality, consistency, presentation, and ticket times
- Manage ordering, inventory, receiving, and vendors
- Control food cost, labor, waste, and kitchen efficiency
- Maintain a clean, organized, professional kitchen
- Uphold all food safety and sanitation standards What We're Looking For
- Chef de Cuisine, Executive Sous Chef, Sous Chef, or comparable leadership experience
- Proven experience running a high-volume, scratch kitchen
- Strong cooking fundamentals, palate, organization, and leadership
- Experience with food cost, labor, inventory, and ordering
- Ability to hire, train, and develop a strong kitchen team
- Calm, hands-on leadership during demanding services
- Experience or strong knowledge of Mexican and/or Hawaiian/Pacific cuisine
- Familiarity with masa, salsas, braises, seafood, crudos/poke, tropical marinades, and live-fire/BBQ techniques is highly valued
- ServSafe Food Protection Manager and/or Nassau County Food Handler certification New restaurant opening experience is a strong plus.
