Sous Chef - Café
Fiorello Location:
Lincoln Center, New York, NY Schedule:
Full-time, including nights, weekends, and holidays
Salary:
$75,000-$80,000 per year Café Fiorello has been part of the Lincoln Center neighborhood since 1974. Known for classic Italian cuisine and busy service, we are seeking a hands-on Sous Chef to help lead our kitchen team. Working alongside the Executive Chef, the Sous Chef will guide daily preparation and service, support and coach back-of-house employees, and help maintain consistent standards for food quality, organization, and sanitation. This role is well suited to a kitchen leader who stays composed during high-volume service and is ready to work alongside the team at any station. Responsibilities Lead and support the kitchen team during preparation and service. Help ensure dishes meet established recipes, portions, presentation, and quality standards. Monitor ticket flow, production, and preparation levels during busy shifts. Train and coach back-of-house employees and communicate clearly with the Executive Chef and front-of-house management. Step into a station when needed to keep service running smoothly. Maintain food safety, sanitation, cleanliness, and workplace safety standards. Check product rotation, labeling, storage, and temperature controls. Assist with ordering, receiving, inventory, and reducing food waste. Qualifications Sous Chef experience or comparable kitchen leadership experience in a high-volume, full-service restaurant. Knowledge of Italian cuisine is a plus. Strong cooking skills and a working knowledge of food safety and kitchen operations. Ability to lead a team, communicate clearly, and stay organized under pressure. Experience with Italian cuisine preferred. NYC Food Protection Certificate preferred. Availability to work nights, weekends, and holidays. Ability to perform the physical duties of a professional kitchen, with or without reasonable accommodation.
