About SHOSHO is a family-owned Japanese restaurant that has been serving the Portland community since 2010. We are committed to serving authentic Japanese cuisine made from scratch, including our house-made sauces, soups, dressings, sushi, and traditional Japanese dishes.

We are not an omakase-only sushi restaurant. Our menu represents a broad range of Japanese cooking, and our sushi team works alongside an experienced kitchen team to provide our guests with the variety and quality of food you would expect from a traditional Japanese family restaurant.

About the PositionWe are looking for an experienced Sushi Chef to join our long-standing team. The ideal candidate should be comfortable preparing fish and making nigiri, sashimi, and sushi rolls, with good knife skills and an understanding of proper fish handling.

We value experience and skill, but reliability, teamwork, a positive attitude, and willingness to continue learning are equally important to us. We are looking for someone who wants to become a dependable, long-term member of our team.

Responsibilities Prepare fish and other ingredients for daily sushi service Prepare nigiri, sashimi, rolls, and other sushi dishes Maintain quality, consistency, presentation, and portion standards Maintain a clean and organized sushi station Monitor inventory and communicate ingredient needs Follow food safety and sanitation standards Work closely with our sushi and kitchen team during service Assist with other kitchen duties when neededPreferred Qualifications 2+ years of sushi or Japanese restaurant experience preferred Experience preparing nigiri, sashimi, and sushi rolls Good knife skills and knowledge of fish preparation Ability to work efficiently in a fast-paced restaurant Reliable, responsible, and able to work well as part of a team Positive attitude and willingness to learn
