Job Summary:
JOB DUTIES
Skillfully prepare, cook, and artistically present traditional Japanese dishes, including sushi, sashimi, specialty rolls, seafood, soups, and sauces. Expertly cut and portion fish for sashimi and craft a variety of sushi and rolls using fresh, raw fish. Prepare and assemble ingredients for sushi, rolls, and other Japanese menu items in accordance with established recipes and quality standards. Debone, fillet, and clean a variety of fish, and cook them using appropriate Japanese culinary techniques. Customize sushi orders based on individual customer preferences and special requests, ensuring accuracy and satisfaction. Lead and oversee kitchen staff, managing daily culinary operations and maintaining workflow efficiency. Develop and implement kitchen procedures, while ensuring strict compliance with food safety, hygiene, and sanitation standards. Ensure all dishes are visually appealing and served at peak freshness, maintaining high presentation and taste standards. Forecast ingredient and supply needs, inspect inventory quality, maintain accurate records, and coordinate purchases of food and equipment as needed.
