Salary:
$19.00 - $23.00 / hour - depending upon experience / education Job Summary The Head Chef assumes the lead position in the main entree cooking area and is directly involved in the planning, preparation, and production of main courses and entree items. Assists the Food Service Supervisor in formulating daily production schedules, establishing raw material quantities, and setting specific food counts. Operates cook/chill equipment according to regulatory agency standards. Follows a daily production schedule, and uses standardized recipes in the production of all foods. Assists in revising these items when required. Follows the department's policies and procedures for safe food production. Instructs other personnel on tasks in the cooking area. Assist's Supervisor in weekly cooks scheduling Prepares and packages main course and entree items for the menu, special requisitions and other special occasions. Produces all food items to meet the department's delivery schedule. Practices economic utilization of foods to avoid waste. Maintains high quality standards on all prepared foods. Keeps area clean, safe and organized. Other related duties as assigned Assists in other department positions as needed. Associates Degree in Culinary Arts preferred or formal training in a Technical school, restaurant, or hotel. Minimum four years of volume cooking experience required. Knowledge in cook chill processing, culinary arts and gluten free foods. Experience in high volume cooking and knowledge of proper utilization of food services equipment. Knowledgeable of safe food preparation and must be ServSafe Certified. Must be able to lift a minimum of 50 pounds. Our Langhorne campus is home to 550 residents, and provides outpatient and day programs.
