Job Overview We are seeking a passionate and skilled Omakase Head Chef to lead our exclusive sushi restaurant that is currently being renovated. In this role, you will craft exceptional, artfully prepared omakase menus that showcase the finest ingredients and elevate our restaurant's reputation for fine dining excellence. As the culinary leader in sushi artistry, you will oversee all aspects of sushi preparation, kitchen management, and team supervision, ensuring every guest receives an unforgettable dining experience rooted in authenticity, creativity, and precision. Duties Head Chef is a full-time, on-site role based at City Center in Philadelphia, PA Lead the creation and execution of innovative omakase menus that highlight seasonal ingredients and culinary artistry, with nightly execution of multi-course tasting experiences at the sushi counter and in the main dining room Oversee daily kitchen operations, including food preparation, plating, and presentation standards for sushi Supervise and mentor sushi chefs and kitchen staff to maintain high standards of craftsmanship, hygiene, and efficiency Manage inventory control, ordering supplies, and maintaining food safety and sanitizing procedures to ensure freshness and compliance with health regulations Coordinate with front-of-house teams to deliver seamless food service experiences aligned with fine dining expectations in technique, timing, and presentation Implement cost control measures while maintaining quality standards across all menu offerings Ensure adherence to food safety protocols, including proper handling, storage, and sanitation practices in line with industry regulations This role also involves engaging with guests at the counter, explaining courses, and creating a personalized, memorable dining experience aligned with the restaurant's brand and standards Skills Demonstrated skill in knife work, fish butchery, rice preparation, seasoning balance, and intricate plating techniques Proven leadership experience managing a kitchen team, including scheduling, training, performance feedback, and maintaining a respectful, inclusive work culture Thorough knowledge of food safety regulations, kitchen sanitation practices, and quality control standards, with a commitment to consistent execution Ability to design and adjust tasting menus based on seasonality, supply availability, and guest feedback, while controlling food costs and minimizing waste Strong communication skills, including confidence in interacting with guests during omakase service and coordinating with front-of-house staff Experience working in a fast-paced, high-volume urban restaurant environment, with the ability to stay organized and calm under pressure Flexibility to work evenings, weekends, and holidays as required by restaurant operations Formal culinary training or equivalent professional experience in Japanese or fine-dining cuisine is preferred Legal authorization to work in the United States and ability to reliably commute to or reside near Philadelphia, PA Bring your mastery of Japanese cuisine to life!
