Pastry Chef Alessandro's Ventures Alessandro's Enoteca | Alessandro's Wood Fired Italian | Alessandro's Pizzeria About Us Alessandro's Ventures is a growing family of Italian-inspired restaurants, each with its own distinct personality — from the refined, bar-centric experience at Alessandro's Enoteca, to the rustic, Italian-American cooking of Alessandro's Wood Fired Italian, to the casual, fun energy of Alessandro's Pizzeria. What unites all three concepts is a shared commitment to bold flavor, quality ingredients, and genuine hospitality. We're looking for a creative, hands-on Pastry Chef to build out our dessert program across all locations. The Role The Pastry Chef is responsible for developing, producing, and standardizing the dessert menus across all Alessandro's Ventures concepts. This is a true creative leadership role: you'll design original desserts that reflect the identity of each restaurant, cost them for profitability, and train kitchen teams to execute your recipes consistently and beautifully - every time, in every location. You'll work closely with, and report to, the Executive Culinary Team, aligning your creative direction with the broader vision of the company while bringing your own point of view to the dessert program. What You'll Do Create & Develop — Design original dessert menu items tailored to each concept's identity: elegant and wine-friendly for the Enoteca, rustic and fire-kissed for the Wood Fired concept, and approachable/craveable for the Pizzeria. Produce — Prepare and produce desserts to spec, maintaining consistent quality, presentation, and portioning across all outlets. Cost & Menu Engineering — Write accurate recipe costs, determine pricing in partnership with the culinary leadership team, and manage food cost targets for the pastry program. Train & Standardize — Develop clear recipe documentation and training materials; train and coach line cooks and kitchen staff at each location to execute your desserts to standard. Quality Control — Conduct regular tastings and kitchen visits across locations to ensure consistency, freshness, and presentation standards are being met. Collaborate — Partner with the Executive Chef and culinary leadership on seasonal menu changes, LTOs (limited-time offers), and special events or private dining requests. Inventory & Ordering — Manage pastry-specific ordering, inventory, and vendor relationships in coordination with kitchen management. Sanitation & Compliance — Maintain all health, safety, and sanitation standards in accordance with local regulations and company policy. What You Bring 3+ years of professional pastry experience, ideally including a leadership or lead pastry role. Proven experience developing original recipes/menus, not just executing someone else's. Strong recipe costing and menu pricing knowledge. Experience training and developing kitchen staff, including non-pastry cooks. Comfort working across multiple concepts/locations and adapting style to fit each one. A collaborative mindset — comfortable reporting to and coordinating with an executive culinary team. Food safety certification (ServSafe or equivalent) preferred. Passion for Italian cuisine and ingredient-driven cooking is a big plus. What We Offer Competitive salary, depending on experience.
