Job Description

We are seeking an experienced Sushi Chef to join our culinary team. The ideal candidate has strong experience handling and preparing fresh fish, excellent knife skills, and a passion for delivering high-quality sushi and Japanese cuisine. The Sushi Chef will be responsible for daily sushi preparation, fish handling, maintaining food quality and safety standards, and ensuring an exceptional dining experience for our guests. Key Responsibilities
  • Properly receive, inspect, store, and handle fresh fish and seafood.
  • Demonstrate advanced knife skills, including filleting, portioning, and slicing fish.
  • Prepare sushi, sashimi, nigiri, rolls, and other menu items according to established recipes and presentation standards.
  • Maintain consistent quality, portion control, freshness, and presentation.
  • Prepare daily mise en place and ensure the sushi station is fully stocked and organized.
  • Maintain proper food safety, sanitation, and temperature-control standards.
  • Monitor inventory and communicate ordering or product-quality needs to management.
  • Minimize food waste through proper preparation, storage, and utilization of ingredients.
  • Maintain a clean, organized, and sanitary work station throughout the shift.
  • Work closely with the culinary team to ensure smooth kitchen operations.
  • Follow all company policies, health department regulations, and food safety procedures. Qualifications
  • 2+ years of professional sushi chef experience preferred.
  • Proven experience handling, filleting, and preparing fresh fish.
  • Strong knowledge of seafood quality, freshness, storage, and proper handling.
  • Excellent knife skills and attention to detail.
  • Knowledge of sushi preparation techniques and Japanese cuisine.
  • Ability to work efficiently in a fast-paced kitchen environment.
  • Strong commitment to cleanliness, food safety, and sanitation.
  • Ability to work independently while being a strong team player.
  • Reliable attendance and punctuality are required.
  • Must be available to work Wednesday through Sunday, 11:00 AM-8:00 PM.
  • Full-time commitment required.

Pay:
$60,000.00 - $70,000.00 per year
