We are looking for a Pastry Assistant / Pastry Line Cook to join our growing kitchen team. Our pastry program centers around seasonal plated desserts and select catering events. As the seasons change, so does our menu, and we place a strong emphasis on using the best ingredients available. With the holiday season approaching, this position will also have the opportunity to work with some of Heritage Tavern's traditional desserts such as the crocuembouche & our buche de noel. The Position This position combines pastry production with dinner service. During the day, you will work with our pastry chef preparing the components of our desserts. The 2nd half of your shift you will help bring those desserts to life during service by plating what you have helped prepare. In this position, you will initially work closely with the pastry chef, with the expectation that you will oversee the day-to-day of the pastry/ charcuterie station. Responsibilities Prepare components for seasonal plated desserts Assist with cakes, doughs, creams, custards, mousses, garnishes, and other pastry preparations Scale and measure ingredients accurately Maintain organized, properly labeled, and well-stocked pastry mise en place Plate and finish desserts during dinner service Maintain consistency, quality, cleanliness and attention to detail throughout service Assist with pastry production for select catering events Follow proper food safety and sanitation practices Work collaboratively with the pastry chef, chef de cuisine, and the rest of the kitchen team Continue developing technical skills. As you advance the menu will advance. What We're Looking For We are looking for someone with at least one year of professional pastry experience or schooling, who has a strong foundation and a genuine desire to continue learning.
You should be comfortable:
Reading and following recipes independently Working efficiently and staying organized in a fast-paced kitchen Understanding the fundamentals of mixing and baking With basic piping techniques With the fundamentals of candy and chocolate work Working independently while knowing when to communicate and ask questions Receiving feedback and using it to improve Maintaining consistency and attention to detail Fine-dining experience is not required. We are more interested in someone who is passionate about pastry, takes pride in their work, and wants to continue growing. The person who succeeds in this position is passionate, curious, and excited to learn. You enjoy working in a fast-paced environment and care about doing things correctly, not simply getting them done. Schedule Full-time 35-40 hours per week 4 days per week Typical hours: 12:00 PM-10:00 PM Location This position will work at two locations - Heritage Tavern (downtown Madison) and Heritage Catering (Fitchburg, WI), dependent on access to transportation. There is flexible scheduling available and work will be completed from both of our fully equipped kitchens. Qualifications Training and/or Apprenticeship in Pastry/Baking 1+ years in the field of Pastry and Dessert Fine Dining background desirable Experience and comfort with menus driven by seasonal influence Contemporary pastry style preferred Farm to Table appreciation a must Experience with large scale dessert preparation helpful (50-100 people+) Job Requirements This position will include ample opportunity to make pastry and other elements of dishes to be served nightly at our restaurant and (as scheduled) for catering events. This position will work closely with our Chef team to curate our pastry menus. About Us We operate three businesses in the Madison area: Heritage Tavern, Heritage Catering and Fox Heritage Farms (Willow Creek Farms). We are a family business at the core and have staff that have been with the company for many years. Heritage Tavern is an independent restaurant that is family owned and operated, located in the heart of downtown Madison. We offer a sophisticated atmosphere with fine dining service and a fun craft cocktail bar. We have been successfully operating since 2013 with a rotating menu with fresh, farm-to-table influences and old world classics. We work with local ingredients from farmers in Dane county and high quality meats from our own animals and meat processing facility. Heritage Catering, based in Fitchburg, WI, has been providing upscale catering services to both private and corporate customers in and around the Madison area since 2012. We have been the Premier Caterer for Concerts on the Square for several seasons and just finished a busy Summer season. Fox Heritage Farms/Willow Creek is our meat processing facility and home office, located in Prairie du Sac. We have a central office at this location and operate a small meat market for the public. In partnership with small WI family farms, we breed and raise our Berkshire hogs on open pasture, without antibiotics or hormones. All products we sell are produced by our local team and out of our own meat processing facility. We sell products both wholesale and retail.
