At Lola's, we are a small team. Our Executive Sous Chef works alongside our line cooks and prep cooks. They help develop recipes, create specials, oversee deliveries, maintain kitchen cleanliness, and work in conjunction with our AGM and GM to hire and further develop team members. The ideal Executive Sous Chef is passionate about high-quality food, detail-oriented, and a skilled communicator and motivator. Strong communication and respect for all team members and guests is required. As well-established operators in the Madison community, including Ancora cafes and Cadre restaurant, we are committed to building community and enhancing the quality of life in our city by creating unique and memorable experiences through exceptional and thoughtful hospitality. Key Responsibilities
- Manage BOH workflows from prep to line, ensuring efficiency, consistency, and quality
- Highly proficient in all BOH tasks—line, prep, cleaning, and organization—leading by example with a no-task-is-beneath-anyone mindset
- Maintain a clean, organized, and efficient kitchen that meets all health and safety standards
- Collaborate on new menu development with Evan, including recipe testing and food costing
- Manage labor costs and motivate staff in a high paced environment Team Leadership & Training
- Staff, train, and develop BOH team members through ongoing training and coaching
- Ensures the team is well supported and procedures updated through new menu changes
- Foster positive communication between BOH and FOH teams through hands-on leadership
- Set clear expectations around food quality, efficiency, cleanliness, and teamwork
- Conduct regular check-ins, feedback conversations, and yearly performance reviews
- Encourage a culture of accountability, teamwork, and mutual respect Inventory, Ordering & Financial Control
- Monitor food costs, waste, and labor efficiency; flag concerns and trends to management
- Track and report accurate monthly inventory counts to the bookkeeper on schedule
- Work within established labor and cogs budgets while supporting growth goals
- Identify opportunities to control costs by improved vendor pricing and operational efficiencies Food Safety & Compliance
- Ensure compliance with health department regulations and company food safety standards
- Maintain up-to-date food safety certifications and ensure staff compliance
- Ensure weekly, monthly, and deep-clean checklists are completed, and updated as needed Administrative Duties Allocate 8 hours of off-floor administrative time per week for tasks including: ○ Creating and adjusting staff schedules ○ Conducting weekly labor and sales analysis ○ Reviewing invoices and tracking COGS to identify trends ○ Reviewing inventory, order guides, and waste logs to improve margins Qualifications • 2+ years of experience in a commercial kitchen • 1+ year of previous supervisory experience • High level of professionalism and respect for teammates and guests • Comfortable working in an active fast-paced environment • Cleanliness and proper knowledge of food safety (ServSafe Certified) • Dependable and punctual • POS (Toast), computer and Google Workplace literacy • Excellent verbal and electronic communication and organization skills

Assistant General Manager Physical Requirements
- Ability to stand for extended periods and work in a fast-paced kitchen environment.
- Ability to lift up to 50 lbs.
Schedule:
- Full-time (40+ hours) - typical scheduling is 2 days off per week
- Additional special event shifts required as needed
Compensation:
Salary:
$55,000-60,000 DOE.
Bonus:
Performance Based - up to $2500 per quarter
