Job Description
Caldera House is a spirited luxury condo-hotel and commercial property located within the heart of Teton Village in Jackson Hole, WY. With our prime location, 'the House' (as we like to call it) offer's luxury condos and memberships, which gain access to our state of the art locker room, valet parking and concierge service, high-end spa facilities, and plush apres-ski lounge, all at the foot of one of the best resort mountains in the world. In addition, Caldera House includes a cafe, two restaurants, and sports shops for all visitors of the resort to enjoy. Caldera House is dedicated to perfecting the travel and dining experience through the highest standards of hospitality. The Executive Sous Chef helps maintain and create memorable and bespoke experiences for our guests through food, special creations and consistency. The Executive Sous Chef guides the team and embodies the House culture and helps direct the course of food standards in but not limited to Corsa Restaurant, Southcable Cafe, Events, Alpine Lounge, In-Suite Catering and In-Room Dining; all in conjunction with expectations outlined by the Executive Chef. Unlike other luxury hotels, Caldera House is defined by its spirited staff and authentically personalized service. The Executive Sous Chef's main responsibilities include inspiring the kitchen team to excel and exceed expectations, creating and maintaining positive energy and ensure that everything had been prepared according to Serv Safe standards. The Executive Sous Chef works with the Executive Chef in managing day to day operations of the culinary department at Caldera House. Responsible for assisting with all menu development, food purchasing and production. Operates within budget guidelines, maintains high quality level, excellent guest response and general upkeep of the kitchen. Ensures all health and safety standards are met. Oversees hiring, training and discipline of culinary staff according to hotel policies and procedures alongside the Executive Chef. Essential Job Duties Manages the food preparation for food and beverage outlets in the hotel.
This includes:
Corsa Restaurant, Southcable Café, Shin Shin Restaurant, Alpine Lounge, Room Service. and In-Suite Catering & Events Assist with the creation, planning, and menu writing for the above food and beverage outlets and operations Establish and maintain appropriate food portions & monitor food waste with respect to the hotel's pricing Act within the interim Executive Chef's performance capacity in the absence of the Executive Chef at any given moment Participate in the development and implementation of business strategies for the kitchen that are aligned with the company's overall mission, vision, values, and strategies. Work closely with the Executive Chef as it relates to ordering and inventory management associated with the restaurants, Southcable Cafe, Alpine Lounge, Room Service, In-Suite Catering & Events. Work with the Executive Chef developing standards and processes to assist in delivering consistent culinary products. Keep current on pulse of the guests, constantly seeking opportunities to follow up on their experience. Assist in efforts in recruiting, hiring, training, and supporting all BOH and culinary staff required for the operation. Uphold company guidelines and policies as it relates to performance management, onboarding, termination, and seasonal closures - ensure compliance. Assist the Executive Chef in managing the culinary team's schedules, timeclock and tips, and ensure tight labor cost management. Act as a strong and positive leader, be proactive with retention strategies. Service standards should strike a balance between the unique culture of Jackson Hole and luxury hospitality Attend weekly Food and Beverage meetings and monthly manager meetings, relaying relevant information to Caldera House team members. Maintain good relationships with vendors, community groups and industry associates. Ensure adherence to safety and health regulations. Follow protocol for reporting workplace injuries, fill out appropriate indcident reports and alcohol log. Provide a safe environment for guests and employees, and ensure compliance with County health department regulations. Play an active role in identifying challenges facing the organization and present constructive solutions to help lead the organization forward Creative, solution-oriented thinking is key to the success of this position.
