Directs and oversees the activities of cooks during a specific shift while ensuring job expectations are completed and proper policy and procedure is maintained. Prepares food in accordance with applicable federal, state and corporate standards, guidelines and regulations with established policies and procedures. Key Responsibilities:
Prepares and serves high-quality food items according to standardized recipes and dietary needs. Follows daily production sheets using outlined standards, proper portioning and correct temperature. Tastes all prepared food items to confirm correct flavoring and ensures attractive presentation. Serves meals or prepares for delivery by using correct portioning, meeting outlined standards, ensuring that food is at the correct temperature and is attractive and tasty. Cleans kitchen after preparation and serving, maintaining high standards of cleanliness. Stores or discards excess food in accordance with safe food-handling procedures. Keeps refrigerators, freezers and storerooms clean and neat. Ensures food and supply items are stored and labeled per standards. Operates and maintains kitchen equipment as instructed. Assists in production planning, record keeping and reporting as required. Assists in the ordering and receiving of all food and supplies as required. Labels, dates and properly store all food items. Reports needed maintenance, faulty equipment or accidents to the supervisor immediately. Attends in-service and safety meetings. Follows HACCP (Hazard Analysis and Critical Control Points) to ensure quality and safety of food supply. Complies with federal, state and local health and sanitation regulations and department sanitation procedures. Complies with all state and county health codes for food handling. Maintains good working relationships with coworkers, residents and guests. Performs job safely while maintaining a clean, safe work environment. Assists chefs in maintaining accurate daily production records and completes all required documentation, reports, and logs as assigned. Assists in the cross training of employees. Supervises the kitchen in the absence of the Executive or Sous Chef(s). Opens or closes the kitchen according to schedule. Supervision of cooks and kitchen stewards.
Your Qualifications:
High school diploma or equivalent. Prior commercial kitchen experience required. Able to complete ServSafe Certification. Must have Food Handlers Certificate. Possess current or has the ability to obtain a Level 1 Fingerprint Clearance Card is required.
