Qualifications Food Handler Certification Full Job Description Schedule:
11:00 PM - 7:00 AM, Monday-Thursday Job Summary We are seeking a dependable Overnight Prep Cook to support our food truck operations, including meat cutting and portioning, soup preparation, and bulk ingredient prep. The ideal candidate is comfortable handling raw proteins, following standardized recipes, and maintaining food safety and quality standards.
Key Responsibilities Meat Cutting & Portioning:
Cut, trim, slice, weigh, and portion various proteins, including beef, pork, and poultry, according to company recipes, specifications, and portion standards.
Precision Weighing:
Use digital scales to weigh accurately and portion proteins and other ingredients while maintaining consistency and minimizing food waste.
Soup & Broth Preparation:
Prepare soups, broths, and other bulk items according to standardized recipes and production requirements, including measuring ingredients and monitoring cooking times and temperatures.
Overnight Prep Work:
Complete assigned nightly prep tasks, including cutting meats, preparing soups and broths, portioning ingredients, and preparing bulk items needed for the next day's food truck operations.
Recipe & Quality Standards:
Follow company recipes, portion specifications, and preparation procedures to maintain consistent food quality and production standards.
Food Safety & Storage:
Properly label, date, store, and rotate prepared food using FIFO (First In, First Out) procedures. Maintain raw and prepared foods at required safe temperatures and follow proper cross-contamination prevention procedures.
Kitchen Sanitation:
Clean and sanitize workstations, cutting boards, knives, meat slicers, containers, cooking equipment, and other prep tools throughout the shift and before leaving the kitchen.
Inventory Monitoring:
Monitor ingredient and protein levels and promptly report shortages, damaged products, or quality concerns to the Kitchen Manager or supervisor.
Receiving & Organization:
Assist with organizing food deliveries and properly storing ingredients in refrigerators, freezers, and dry-storage areas as assigned.
Team Support:
Assist with additional kitchen preparation, cleaning, cooking, or production duties as needed to ensure food truck operations are fully prepared for the next shift. Qualifications Previous kitchen prep, meat preparation, or commercial food production experience preferred. Basic knife skills and experience handling and portioning raw proteins. Ability to follow recipes, portion standards, and food safety procedures. Comfortable using digital scales, meat slicers, and other standard commercial kitchen equipment. Ability to work independently, stay organized, and complete assigned prep work on time. Reliable and able to work overnight shifts as scheduled. Food Handler Card/Certificate required or must be obtained in accordance with applicable requirements. Physical Requirements Ability to stand for extended periods and perform repetitive food-preparation tasks. Ability to bend, reach, lift, and carry food, containers, and kitchen supplies as required, with or without reasonable accommodation. Ability to work safely around sharp equipment and in hot, cold, refrigerated, and wet kitchen environments.
