Job Description

This role is responsible for preparing high-quality dishes using locally-sourced ingredients while supporting our mission of sacred hospitality and environmental stewardship. You'll work across multiple stations (grill, fryer, sauté, cold dishes) in our full-service restaurant that serves breakfast, lunch, and dinner. You'll join a culinary and front of house team that's dedicated to creating a destination dining experience centered around regionally-sourced, healthy, quality foods that honor both the land and local farmers. About Jubilee Railroad Wilderness Lodge & Dining Car Restaurant Jubilee Railroad Wilderness Lodge is a truly unique property located amidst the magical wilderness of Mount Shasta, in a densely-forested valley just beside Castle Crags State Park. Our property has been a top north state vacation destination where guests can eat, play, and stay. We have earned Tripadvisor "Certificate of Excellence" property and a strong and loyal customer base.
Our property consists of:
  • Lodging:
    23 custom train caboose hotel rooms and 4 vintage cabins
  • Food:
    A full service farm-to-table restaurant and bar serving breakfast, lunch, dinner, espresso, and craft cocktails
  • Hosting:
    A gift shop, event spaces, hiking and biking trails
  • Camping:
    A 45 space RV park and tent campground with game room and camp store
  • Swimming & More:
    A pool/hot tub, river, ponds, a dog park, playground, snowshoe and yoga mat rentals, and other beautiful amenities
  • Views:

  • snowy winters, flower-filled springs, hot summers for swimming, and colorful changing leaves in the fall.
Description Our kitchen and restaurant philosophy emphasizes relationships with regional and organic producers, reflecting our commitment to environmental stewardship and community connection. This position offers an opportunity to join our hospitality and restaurant team that is expanding and developing a 43-acre property, featuring historic caboose lodging, vintage cabins, a farm-to-table restaurant, scenic campground facilities, a year-round stream, a meadow for events, and connection to myriad hiking trails. As part of Jubilee Railroad's broader vision, our restaurant team members are encouraged to develop deep knowledge about our unique wilderness setting, local food systems, and the transformative educational work happening on site. We believe that every role in our restaurant contributes to creating an atmosphere of genuine care and hospitality, where staff members share their enthusiasm with guests through knowledge of our local farms and the rich biodiversity of the Siskiyou County region. We are located amidst the magical wilderness of Mount Shasta, at the eastern gateway to the "Klamath Knot", a global biodiversity hotspot. We are in a densely-forested, spring-fed valley, at the base of a Jurassic-period crystalline rock formation and State Park connected to the Pacific Crest Trail!
Key Responsibilities:
Food Preparation:
Prepare ingredients and cook menu items according to established recipes and standards.
Cook and Plate Dishes:
Operate kitchen equipment (grill, oven, stovetop, etc.) to prepare and cook dishes. Ensure each plate is consistent with presentation standards.
Station Management:
Take ownership of the assigned cooking station, ensuring it's stocked, clean, and organized throughout the shift.
Quality Control:
Maintain high standards of food quality, portioning, and plating.
Time Management:
Work efficiently in a fast-paced environment to ensure timely and accurate order delivery.
Team Collaboration:
Work collaboratively with other cooks, kitchen staff, and servers to ensure smooth kitchen operations.
Food Safety and Hygiene:
Follow food safety guidelines and maintain proper sanitation and cleanliness in the kitchen at all times.
Inventory Assistance:
Assist in managing kitchen inventory, tracking waste, and alert management of any shortages.
Adaptability:
Handle special requests, dietary restrictions, or modifications from guests.
Menu Development :
always open for input on our seasonal menu changes or if you have ideas for ways to increase productivity in the kitchen, management is happy to hear them
Qualifications:
Experience & Skills:
Prior line cook experience required. Must safely operate kitchen equipment and work efficiently under pressure.
Technical Knowledge:
Understanding of food safety, sanitation, and kitchen workflows.
Physical Requirements:
Ability to stand for extended periods, lift 50 lbs, and work in fast-paced environment.
Personal Qualities:
Strong communication skills, positive attitude, receptive to feedback, interest in sustainable food practices.
