A Cook prepares food in a restaurant or institutional kitchen. May be responsible for a specific station or type of food preparation in a larger kitchen, or specialize as a short-order or fast-food cook. May prepare meals in private homes, or cater parties.
Morning and evening shifts available, with weekend availability required Position Summary The BOH Grill & Prep Cook is responsible for preparing and cooking Nick the Greek's menu items to company standards, maintaining a clean and organized kitchen, and supporting the team to deliver a fast, consistent, and high-quality guest experience. This role works the grill station and prep line, ensuring every item that leaves the kitchen meets our quality, safety, and consistency standards. Key Responsibilities — Grill Cook proteins (beef & lamb gyro, chicken, pork souvlaki, falafel, and vegetarian options) to proper temperature and doneness following recipe and company standards. Monitor food temperatures and hold times to stay within health code requirements. Season and marinate proteins according to recipe cards for consistent flavor. Keep the grill and cook line fully stocked and ready throughout service. Maintain cleanliness of the grill, hood, and cook line throughout the shift, and complete opening/closing line checklists. Communicate clearly with prep and front-of-house staff to keep ticket times on target. Key Responsibilities — Prep Prep vegetables, sauces (tzatziki, dressings), salads, and other ingredients following recipe cards for consistency. Label and date all prepped items and rotate stock using FIFO (first in, first out). Portion proteins for gyro spits and souvlaki skewers to spec. Maintain proper organization and temperatures in the walk-in and reach-in coolers. Check the walk-in during the shift for proper FIFO rotation and product quality. Maintain the 3-compartment sink and sani buckets at proper sanitation levels (200ppm) throughout the shift. Restock prep items as needed to keep the line ready for the next shift. Qualifications Prior back-of-house or kitchen experience preferred, but not required — we'll train the right person. Ability to work a grill station efficiently in a fast-paced environment. Food handler card / ServSafe certification, or willingness to obtain one. Reliable, punctual, and a strong team player. Ability to follow recipes and standards to ensure consistency across every shift. Willingness to learn and grow within the company. Physical Requirements Ability to stand and move for the duration of a shift (up to 8 hours). Ability to lift and carry up to 50 lbs. Comfortable working near heat, open flame, and hot equipment. Ability to safely use knives and other kitchen equipment. Availability to work evenings, weekends, and holidays as needed.
