Job Description
Job Summary The Cook role is responsible for preparing and cooking Aloha Hawaiian BBQ menu items with consistency, speed, cleanliness, and care. This position handles core back-of-house duties including cooking chicken, beef, pork, and other menu items; using the grill and fryer; supporting prep; maintaining quality standards; and keeping the kitchen clean and service-ready.
Role Focus:
Primary lane: cooking menu items correctly and keeping the back of house moving during service. This role may also cut proteins, complete prep, package orders, and clean as needed in a small-restaurant environment. Essential Responsibilities - Cooking & Order Execution- Cook chicken, beef, pork, burgers, fried items, and other menu items according to restaurant standards.
- Safely operate the grill, fryer, rice cooker, hot holding equipment, knives, and other kitchen tools as trained.
- Read tickets carefully, manage timing, and coordinate multiple orders during busy periods.
- Plate food neatly, finish items correctly, and help ensure each order looks generous, clean, and consistent.
- Communicate with front-of-house and prep staff about order timing, shortages, substitutions, special requests, or quality concerns. Essential Responsibilities - Prep, Food Safety & Quality
- Cut, portion, and prepare proteins as needed, including chicken, beef, pork, and other menu items.
- Prepare or assist with marinades, sides, sauces, and other prep tasks when needed.
- Follow proper food safety procedures for raw and cooked foods, including separation, storage, labeling, rotation, and temperature awareness.
- Monitor food quality, flavor, doneness, freshness, and portion consistency throughout the shift.
- Help maintain product levels so the restaurant can handle dine-in, pickup, delivery, and catering orders. Essential Responsibilities - BOH Cleaning, Equipment & Team Support
- Clean and maintain the grill, fryer area, cook line, prep areas, shelves, floors, drains, and equipment as assigned.
- Complete opening, closing, and shift-change duties, including restocking, wiping, sweeping, mopping, trash, and dish support as needed.
- Use cleaning chemicals safely and follow restaurant procedures for sanitation.
- Support prep staff and front-of-house staff when needed, including packaging, order checks, and simple support tasks.
- Help train newer team members on basic kitchen flow, safety, cleanliness, and food quality standards when requested. Skills & Qualifications
- Prior restaurant cooking, grill, fryer, or back-of-house experience is strongly preferred.
- Able to cook efficiently while maintaining quality, cleanliness, and order accuracy.
- Comfortable using knives, handling raw proteins, and working around hot equipment.
- Able to stay calm and organized during rushes and communicate clearly with the team.
- Reliable, team-oriented, and willing to jump in wherever needed in a small restaurant.
- Food Handler Card or ability to obtain one promptly if required. What Success Looks Like
- Food is cooked consistently and leaves the kitchen hot, accurate, and well-presented.
- Orders move steadily during rushes without sacrificing quality or safety.
- The cook line stays clean, stocked, and ready for the next order.
- Prep, FOH, and management receive clear communication and dependable support. Physical Requirements & Work Environment
- Stand, walk, reach, bend, lift, and work around hot equipment for most of the shift.
- Lift and carry boxes, trays, pans, proteins, and supplies, generally up to 50 pounds.
- Work around raw proteins, hot surfaces, fryer oil, steam, sharp tools, wet floors, and cleaning products.
- Perform essential functions with or without reasonable accommodation.
