Job Description
The Prep Cook is responsible for preparing ingredients, food items, and kitchen stations to support efficient meal service in a fast-paced casino restaurant environment. This position ensures all food preparation meets established recipes, quality standards, food safety regulations, and tribal casino policies while contributing to a clean, organized, and professional kitchen. Required Qualifications Previous experience as a prep cook or kitchen assistant preferred Basic knowledge of food preparation techniques and kitchen equipment Understanding of food safety, sanitation, and hygiene standards Ability to work in a fast-paced, high-volume environment Strong attention to detail and time management skills Ability to work independently and as part of a team Willingness to work flexible schedules, including nights, weekends, holidays, and special events Physical Requirement Ability to stand and walk for extended periods Ability to lift and carry up to 50 pounds Frequent bending, reaching, and use of hands and arms Ability to work in hot, cold, and noisy kitchen environments Education and Experienc Previous experience as a prep cook or kitchen assistant preferred Essential Duties and Responsibilities Prepare ingredients for daily service, including washing, chopping, slicing, portioning, and labeling food items Follow standardized recipes, prep lists, and chef instructions accurately Assist with basic cooking tasks as needed (stocks, sauces, soups, etc.) Maintain cleanliness and organization of prep areas, refrigerators, and storage spaces Properly store food according to health department, HACCP, and casino safety standards Monitor food quality, freshness, and expiration dates; rotate stock using FIFO methods Operate kitchen equipment safely, including knives, slicers, mixers, and food processors Assist line cooks and chefs during peak service periods when needed Dispose of waste properly and follow recycling and sustainability guidelines Comply with all tribal gaming enterprise policies, safety regulations, and food safety laws All other duties as assigned
