LINE COOK
Reports to:
Kitchen Manager Summary of Position:
Accurately and efficiently cook meats, fish, vegetables, soups and other hot food products as well as prepare and portion food products prior to cooking. Also perform other duties in the areas of food and final plate preparation including plating and garnishing of cooked items and preparing appropriate garnishes for all hot menu item plates.
Duties & Responsibilities:
ƒ Prepares a variety of meats, seafood, poultry, vegetables and other food items for cooking in broilers, ovens, grills, fryers and a variety of other kitchen equipment. ƒ Assumes 100% responsibility for quality of products served. ƒ Knows and complies consistently with our standard portion sizes, cooking methods, quality standards and kitchen rules, policies and procedures. ƒ Stocks and maintains sufficient levels of food products at line stations to assure a smooth service period. ƒ Portions food products prior to cooking according to standard portion sizes and recipe specifications. ƒ Maintains a clean and sanitary work station area including tables, shelves, grills, broilers, fryers, pasta cookers, sauté burners, convection oven, flat top range and refrigeration equipment. ƒ Prepares item for broiling, grilling, frying, sautéing or other cooking methods by portioning, battering, breading, seasoning and/or marinating. ƒ Follows proper plate presentation and garnish set up for all dishes. ƒ Handles, stores and rotates all products properly. ƒ Assists in food prep assignments during off-peak periods as needed. ƒ Closes the kitchen properly and follows the closing checklist for kitchen stations. Assists others in closing the kitchen. ƒ Attends all scheduled employee meetings and brings suggestions for improvement. ƒ Performs other related duties as assigned by the Kitchen Manager or manager-on duty.
Qualifications:
ƒ A minimum of 6 months of experience in kitchen preparation and cooking. ƒ Must be able to communicate clearly with managers, kitchen and dining room personnel. ƒ Be able to reach, bend, stoop and frequently lift up to 40 pounds. ƒ Be able to work in a standing position for long periods of time (up to 9 hours).

PREP COOK
($18.00 per hour) Reports to:
Kitchen Manager Summary of Position:
The Prep Cook is responsible for preparing ingredients and ensuring the kitchen is stocked and organized for smooth service. This role involves washing, chopping, and portioning ingredients, assisting with menu prep, and maintaining a clean and safe workspace. Attention to detail, adherence to food safety standards, and teamwork are essential for success in this position.
Duties & Responsibilities:
Wash, peel, chop, and prepare fruits, vegetables, and other ingredients according to recipes and portion standards. Prepare sauces, dressings, soups, and other items from scratch according to recipes. Assemble prep stations with all ingredients needed for menu items and ensure items are ready for service. Stock and organize refrigerators, freezers, and dry storage according to FIFO and food safety standards.
  • Help put deliveries away and organize incoming inventory.
  • Label and date all prepared foods and ensure proper storage temperatures (cold foods ≤40°F, hot foods ≥140°F). Maintain a clean, sanitized, and organized prep area, including utensils, cutting boards, and work surfaces. Follow food safety, sanitation, and personal hygiene guidelines at all times.
  • Work with the prep list to manage production priorities and maintain cooling charts for prepared foods.
Assist Line Cooks and other kitchen staff as needed to support smooth service. Complete assigned prep tasks and special projects as directed by the supervisor. Break down and clean prep stations at the end of each shift, storing food and equipment properly.
Qualifications:
Minimum of 6 months of experience in kitchen prep or cooking; experience in a fast-paced restaurant preferred. Ability to communicate clearly with managers, kitchen staff, and front-of-house personnel. Physically able to reach, bend, stoop, and frequently lift up to 40 pounds. Able to stand for long periods of time (up to 9 hours) and work in a fast-paced environment. Knowledge of food safety standards, proper food handling, and sanitation procedures. Ability to follow recipes, portion guidelines, and prep instructions accurately. Experience using a bandsaw or willingness to be trained in safe meat-cutting techniques. Strong attention to detail, organization, and time management skills. Flexibility to work various shifts, including nights, weekends, and holidays as needed. Team player with a positive attitude and willingness to assist others when needed.

DISHWASHER
($17.00 per hour) Reports to:
Kitchen Manager Summary of Position:
Work as part of a team in a fast-paced culinary environment. The dishwasher's duties include removing soiled plates and flatware from tables, washing them thoroughly, and resetting tables in preparation for the next party. They may also restock items, unload delivery trucks, help prepare cook stations, clean appliances and machines, empty and clean trash receptacles, and other duties, as needed.
Duties & Responsibilities:
■ Ensuring the availability of clean dishes by bussing tables, washing dishes, pots, pans, and flatware, and resetting dining areas. ■ Preparing dining areas and kitchen for next shift by cleaning and restocking dining areas and cook stations. ■ Cleaning machines and appliances used in the kitchen, such as coffee makers, pots, and pans, mixers, etc. ■ Unloading and storing deliveries. ■ Sweeping and mopping floors, especially in the event that items are broken or spilled. ■ Taking out the trash and rinsing garbage cans or trash area. ■ Supporting other restaurant staff members by assisting with other tasks, as needed. ■ Reporting kitchen accidents or violations of food safety codes and procedures.
Qualifications:
■ No previous restaurant experience required. ■ Be able to working in a standing position for long periods of time (up to 5 hours). ■ Be able to communicate clearly and effectively in the predominant language(s) of our guests. ■ Must have exceptional grooming habits.
