Cook
GENERAL PURPOSE
The primary role of the Dietary Cook is to provide assistance in all food functions as directed/instructed and in accordance with established food policies and procedures. Duties Inspect special diet trays to assure that the correct diet is served to the resident. Perform administrative requirements such as completing necessary forms, reports, etc., and submit to the Director of Food Services. Coordinate food service with other departments as necessary. Work with the facility's dietitian as necessary and implement recommended changes as required. Ensure that all food procedures are followed in accordance with established policies. Prepare meals in accordance with planned menus. Prepare and serve meals that are palatable and appetizing in appearance. Serve food in accordance with established portion control procedures. Prepare food for therapeutic diets in accordance with planned menus. Prepare food in accordance with standardized recipes and special diet orders. Prepare meals according to resident food preferences and special dietary requirement. Assist in the production of all menu items. Demonstrate safe food handling procedures. Maintain cleanliness of work and storage areas
MINIMUM QUALIFICATIONS
Knowledge of :
1. Basic methods of food preparation and service. 2. Basic methods used in cleaning and sanitizing kitchen equipment, utensils, appliances and facilities. 3. Basic kitchen utensils, equipment and appliances and methods of use. 4. Methods and practices of sanitary food-handling and kitchen safety.
Education, Training, and Experience :
1. Combination of education, training and experience that produces the requisite knowledge and ability. 2. Direct experience as a supervisor in this role or related field
PHYSICAL AND MENTAL DEMANDS 1.
Lifting, carrying and moving heavy shipments and equipment.2. Working in an area with a wide range of temperatures.3. Standing and walking on concrete and tile floors for long periods of time.4. Works with knives, can openers or other sharp objects.
