The ideal candidate will embrace traditional techniques while thriving in our energetic izakaya environment. You'll prepare shareable Japanese dishes with precision, honoring both tradition and creativity. Responsibilities Master station-specific preparation (agemono/fryer, teppan/sauté, butchering, etc) following authentic methods. Maintain impeccable standards for sashimi handling, tempura frying, robata grilling, and more. Execute mise en place using traditional Japanese ingredients (dashi, mirin, specialty produce). Uphold strict sanitation practices following FDA and Japanese kitchen standards. Collaborate in our "ichiban-yasai" (first-vegetable) program for daily fresh prep. Maintain proper Japanese knife care and kitchen tool standards. Support seasonal menu transitions and special omakase events. Qualifications 1+ years of kitchen experience (Japanese restaurant experience preferred, but not required). Understanding of Japanese culinary fundamentals (umami balance, texture, presentation). Ability to work multiple stations. willingness to learn. Practical knife skills. Flexible schedule for izakaya service hours. Preferred Qualifications Experience with Japanese kitchen structure (itamae/sous-chef system). Knowledge of washoku (traditional Japanese cuisine) principles. Familiarity with izakaya-style small plates and shared-dining concepts.
