Grill Cook - Live Fire | Kouklas Greek Eatery (Niles, IL) At Kouklas Greek Eatery, the grill drives the menu. We run a custom charcoal and wood live-fire setup, and we're looking for someone who can step in and own it. This is a high-volume, fast-paced kitchen. We do 200-350 covers in a 5-hour service . You need to be fast, organized, and consistent under pressure. We're also moving toward all-day service , so this role will continue to grow as we expand. Responsibilities Execute all grill items with consistency, accuracy, and speed Manage live fire throughout service (heat zones, timing, recovery) Stay organized and maintain a clean, tight station at all times Keep pace with service without backing up tickets Work directly with expo and the kitchen team to ensure proper flow Maintain quality and standards from first ticket to last Requirements Strong grill experience required (live fire, wood, or charcoal preferred) Able to handle sustained high-volume service Solid understanding of timing, doneness, and temperature control Reliable, on time, and ready to work every shift Communicates clearly and works well within a team No shortcuts, no excuses—just consistent execution What We Offer $26.00-$30.00/hour , based on experience Health, dental, and vision insurance Consistent volume and stable hours Strong opportunity for growth as we expand We are not a slow kitchen and this is not a low-pressure role.
