The Lead Cook / Dietary Manager is responsible for the overall operation of the dietary program within the residential long-term care setting. This position oversees menu planning, meal preparation, kitchen sanitation, food safety, inventory, and supply management. The Lead Cook ensures that all meals meet physician-ordered diets, resident preferences, and applicable Kansas food safety and long-term care regulations. This role provides leadership for the dietary function and maintains a safe, clean, and home-like dining environment for residents.
ESSENTIAL FUNCTIONS
Kitchen Operations and Leadership Oversee daily kitchen operations and meal preparation. Plan, organize, and direct food preparation activities. Ensure meals are prepared and served on schedule. Supervise and support any dietary aides or kitchen staff, if applicable. Coordinate dietary operations with nursing staff and administration. Menu Planning and Dietary Compliance Develop and maintain weekly and monthly menus. Ensure menus meet nutritional standards and physician-ordered diets. Modify meals for special dietary needs, including: Diabetic diets Low-sodium diets Texture-modified diets (chopped, ground, pureed) Monitor resident satisfaction with meals and make adjustments when appropriate. Meal Preparation Prepare and cook meals according to approved menus and diet orders. Ensure meals are nutritious, appealing, and appropriate for residents' needs. Follow portion control and serving guidelines. Ensure timely and consistent meal service. Food Safety and Sanitation Maintain compliance with all food safety and sanitation standards. Ensure proper food storage, labeling, and temperature control. Prevent cross-contamination during food preparation. Maintain cleaning schedules for kitchen equipment and work areas. Complete required sanitation and temperature logs. Inventory and Purchasing Monitor food and kitchen supply inventory. Order food and supplies within approved budgets. Maintain records of purchases and inventory. Reduce waste and manage food costs effectively. Resident Interaction and Quality of Life Treat all residents with dignity, respect, and compassion. Consider resident preferences when planning menus. Respond to reasonable special meal requests. Promote a pleasant, home-like dining experience. Report concerns about resident appetite or nutritional intake to staff. Infection Control and Safety Follow all infection control policies and procedures. Practice proper hand hygiene and use PPE when required. Maintain a clean and safe kitchen environment. Report hazards or equipment issues immediately. Resident Rights and Protection Protect resident privacy and confidentiality. Treat all residents with dignity and respect. Report suspected abuse, neglect, exploitation, or misappropriation of resident property immediately in accordance with facility policy and Kansas law.

JOB REQUIREMENTS
Previous experience as a cook, lead cook, or dietary manager preferred. Experience in long-term care, assisted living, or group home settings preferred. Knowledge of food safety and sanitation practices. Ability to plan menus and manage kitchen operations. Successful completion of background check. Ability to read, write, and communicate effectively in English. Physical Requirements Ability to stand for extended periods. Ability to lift up to 40-50 pounds.
