Key Responsibilities:
Fish Breakdown & Filleting:
Clean, skin, fillet, and portion whole fresh fish (salmon) with precision, minimal waste, and proper knife techniques.
Prep & Station Organization:
Prepare raw seafood, vegetables, and signature house-made fusion sauces according to recipe and hygiene standards.
Sushi & Sashimi Assembly:
Roll specialty maki, slice clean sashimi, and assemble high-standard nigiri and contemporary carpaccios with speed and artistic presentation.
Food Safety & Cold Storage:
Manage raw seafood safely according to strict health standards, including temperature monitoring, freshness rotation (FIFO), and immaculate sanitization of cutting boards and tools.
Catering & Special Events:
Assist in prepping, assembling, and plating large-scale, high-impact sushi platters for private catering, pop-ups, and special banquet events with efficient time management.
Team Synergy:
Maintain open communication and assist during peak service rushes to guarantee smooth workflow and timely orders.
Qualifications:
Proven Fish Handling Skills:
Real, demonstrable experience cleaning, filleting, and slicing whole fish and seafood for sushi/sashimi.
Sushi Experience:
Prior background as a Sushi Cook / Line Cook Passion for
Fusion:
Curiosity and excitement for modern Japanese-Brazilian fusion flavors and presentation.
High Standards & Hygiene:
Sharp knife discipline, respect for ingredients, and pride in maintaining an exceptionally clean station.
Event & Schedule Flexibility:
Dependability during core kitchen shifts and openness/availability for occasional high-volume catering events and weekend services.
Languages:
Portuguese, Spanish, or English speakers are all welcome.
