Job Description

Lucky Danger isn't your typical American Chinese restaurant—it's an evolution. We describe it as 'American-Chinese by a Chinese-American,' a concept that takes the nostalgic flavors we all grew up with and elevates them through the lens of classic culinary technique and high-quality ingredients. It's fast, it's intense, and it's deeply rooted in the idea that this specific cuisine deserves the same level of respect and care as every other cuisine. We're part of Tim Ma Hospitality, which means we value systems and precision just as much as we value flavor. At Lucky Danger, we work hard, move fast, and take immense pride in being the neighborhood's go-to spot. We're looking for people who want to master a unique craft and grow with a brand that is redefining what modern American-Chinese food looks like. The Role The Lead Line Cook is the 'Captain' of the line. You are a technical expert who sets the pace for the entire kitchen. While you own your specific station, you also keep a bird's-eye view on the rest of the line, stepping in to support junior cooks and ensuring the rhythm of service never breaks.
What You'll Own Station Excellence:
Set the gold standard for station setup, cleanliness, and execution for the rest of the team to follow.
Service Leadership:
Act as a secondary 'eye' for the Sous Chef, helping to coordinate ticket timing and ensuring all plates for a table are finished simultaneously.
Training:
Actively mentor Line Cooks and Commis, teaching them the 'why' behind our techniques and recipes.
Quality Control:
Taste every component on your station daily; ensure all prep meets our standards before service begins.
Closing Oversight:
Lead the line's breakdown and cleaning, ensuring the kitchen is in perfect condition for the next morning's team. Who You Are 3+ years of experience in a professional, high-volume kitchen. A reliable, punctual professional who leads by example, not by volume. Strong communication skills and the ability to multitask in a high-heat environment. What We Offer Competitive hourly rate + potential for lead-based incentives. Health benefits and PTO. Access to advanced culinary training and growth into a Sous Chef role.
