Job Description

The Commissary Kitchen is where the food experience across The District begins. From sauces and prepared ingredients to the cooked components that support our restaurants and hospitality concepts, our team works behind the scenes to produce food at scale with the quality, flavor, and consistency our guests experience throughout The District. As a Cook II, you'll bring experience and versatility to a kitchen that's being built from the ground up. We're looking for someone who can move confidently across stations, shifts, and production needs, and who understands that opening a new kitchen takes an all-hands approach. You'll cook, prep, set up, clean, cross-train, and step into other concepts or locations when needed, adapting as the operation grows while helping us build the standards and consistency that will define the Commissary Kitchen. How You'll Make an Impact Work across stations and production areas, using your experience to step in wherever the kitchen needs you. Prepare and execute recipes and production batches with consistency, accuracy, and attention to quality. Support the opening of the Commissary Kitchen with an all-hands approach, from production and station setup to stocking, organization, cleaning, and daily readiness. Cross-train throughout the kitchen so you can confidently work in different areas as production needs change. Adapt to changing priorities, production volumes, and workflows as the Commissary Kitchen grows into full operation. Support other Table & Banter concepts and locations when needed, bringing the same level of execution and professionalism wherever you're working. Maintain organized, clean, and production-ready work areas while following food safety, sanitation, storage, labeling, and handling standards. Work collaboratively with culinary leadership and the broader kitchen team to keep production moving and meet the needs of the concepts we support. Bring the schedule flexibility needed in a growing hospitality operation, including different shifts, weekends, and holidays when required. What You'll Bring 3+ years of progressive professional cooking experience in a restaurant, commissary, production kitchen, hotel, or other high-volume culinary environment, with demonstrated proficiency across multiple cooking methods and stations. The adaptability to support the opening of a new kitchen, including setup, cleaning, production, and evolving operational needs. Strong knife skills and well-developed food preparation techniques, including experience preparing sauces, stocks, soups, dressings, proteins, and other culinary components. Proficiency in sauteing, grilling, roasting, frying, and other professional cooking methods, with an understanding of proper cooking temperatures, doneness, and food quality. Demonstrated ability to consistently deliver quality work, keep pace with production needs, and follow through on assigned responsibilities. A willingness to cross-train across stations, assist with training less-experienced cooks, and contribute wherever the operation needs you. Strong organization and timing skills, with the ability to coordinate multiple preparations and production priorities while maintaining quality. Proven ability to maintain strong performance across changing production needs while consistently meeting expectations for quality, accuracy, and pace. An understanding of food safety, sanitation, proper storage, labeling, temperature control, and safe operation of professional kitchen equipment. Awareness of inventory levels, ingredient utilization, and waste reduction, with the ability to communicate shortages and production needs. Flexibility to work across shifts, weekends, holidays, and other Table & Banter concepts or locations as business needs develop.
