Must have evening/dinner, closing, and weekend availability About Campus Town Grill Campus Town Grill is a family-owned, fast-casual HMS Halal Mediterranean & American Grill located in Campus Town at The College of New Jersey (TCNJ) in Ewing, NJ. Our menu combines Mediterranean, American, and select Indian-inspired dishes, including shawarma, gyro, kebabs, burgers, chicken, falafel, hummus, salads, naan, and more. We are looking for an experienced Cook / Kitchen Team Member who can contribute immediately while continuing to learn and develop additional kitchen skills. We value cooks who take pride in food quality, preparation, cleanliness, organization, and consistency. Position Summary The Cook / Kitchen Team Member will be responsible for daily food preparation, cooking, meat preparation, kitchen organization, dishwashing, cleaning, restocking, food safety, and closing procedures. This is an active kitchen position. The ideal candidate has previous restaurant kitchen experience and is comfortable working with raw meat, grills, fryers, commercial cooking equipment, and high-volume food preparation. Kitchen Responsibilities Food Preparation Prepare ingredients for daily service Cut, trim, slice, portion, and prepare fresh and frozen meats Prepare chicken, beef, lamb, and other proteins Marinate meats according to recipes and procedures Prepare vegetables, sauces, marinades, and other ingredients Prepare and stack shawarma cones Prepare food for daily service and future batch production Label, date, store, and rotate food properly Follow FIFO procedures Cooking Experience with some or all of the following is preferred: Gas range Commercial oven Charbroiler Grill Vertical shawarma broiler Deep fryer Tandoor oven Other commercial kitchen equipment Menu experience may include: Mediterranean / Middle Eastern Chicken shawarma Gyro Beef/lamb Shish tawook Lamb Adana Kofta Falafel Hummus Baba ghanoush Salads Naan Other Mediterranean dishes American Smash burgers Chicken tenders Wings French fries Loaded fries Other grill/fryer items Indian-inspired Butter chicken Chicken tikka Related rice/wrap/bowl preparations Kitchen Operations Maintain clean and organized prep stations Keep refrigerators, freezers, shelves, and storage areas organized Monitor food levels and communicate low inventory Restock ingredients and supplies Follow recipes, portion standards, and food-quality procedures Prevent cross-contamination Follow halal food-handling procedures Maintain proper food temperatures Follow food-safety and sanitation requirements Properly store and label food Dishwashing & Cleaning Kitchen team members are expected to participate in cleaning throughout the shift.
Responsibilities include:
Wash dishes, utensils, pots, and pans Clean and sanitize food-preparation surfaces Clean cooking equipment Clean grills, fryers, work surfaces, and other equipment as assigned Sweep and mop kitchen floors Remove trash Clean storage and back-of-house areas Maintain a clean kitchen throughout service Complete assigned opening and closing cleaning duties Opening & Prep The kitchen generally begins opening preparation around 10:00 AM .
Opening responsibilities may include:
Preparing proteins Cutting and portioning meat Marinating Preparing vegetables and sauces Preparing cooking stations Checking inventory Restocking stations Preparing equipment for service Cross-Training Expectations We want experienced cooks who can also continue developing their skills.
You may be cross-trained in:
Meat cutting and trimming Shawarma preparation Marinades and sauces Grill Charbroiler Fryer Gas range Commercial oven Tandoor Food prep Dishwashing Food storage Inventory Food safety Opening procedures Closing procedures Every kitchen team member is expected to help with preparation, cooking, cleaning, dishes, restocking, and other kitchen duties as needed.
Qualifications Required:
Previous restaurant kitchen experience preferred Strong work ethic and reliability Comfortable working in a fast-paced kitchen Able to safely handle knives and food preparation Able to work with raw meat Able to follow recipes and instructions Strong attention to cleanliness and food safety Able to stand for extended periods Able to lift approximately 40-50 lbs Able to work as part of a team Available for 35-40 hours per week Evening/dinner and weekend availability required
Strongly Preferred:
1-2+ years professional kitchen experience Mediterranean/Middle Eastern cooking experience Shawarma experience Grill/charbroiler experience Fryer experience Meat cutting and preparation experience High-volume restaurant experience ServSafe or food-safety certification Schedule We are specifically looking for candidates who can reliably work: Dinner/evening shifts Closing shifts Weekends Additional hours when needed Daytime-only availability may not meet our current staffing needs.
