Prepares a variety of smoked meats, poultry, vegetables and other food items for cooking in smokers, flat top, char grill, fryers and a variety of other kitchen equipment. Assumes 100% responsibility for quality of products served. Complete opening and closing checklists. Refer to Daily Prep List and Checklists at the start of each shift for assigned duties. Know and comply consistently with our standard portion sizes, cooking methods, quality standards and kitchen and property wide rules, policies and procedures. Monitors smoker temperature and fuel throughout the cook and logs temps at required intervals. Trims, seasons and loads proteins according to spec — no deviation from rub recipes or trim standards without manager approval. Wraps, rests and holds smoked proteins at proper temperature; records cook times and internal temps. Slices, pulls and portions smoked proteins to exact yield spec, understanding that yield is the difference between a profitable plate and a loss. Stocks and maintains sufficient levels of food products at line stations to assure a smooth service period. Portions food products prior to cooking according to standard portion sizes and recipe specifications, using a scale. Eyeballing portions is not acceptable on any item. Cooks wings to spec, sauces to the correct sauce portion, and finishes dry-rub and wet-sauce items per the recipe card. Maintains a clean and sanitary work station area including tables, flat top, char grill, fryers, smoker, sauté burners, convection oven and refrigeration equipment. Prepares item for grilling, frying, sautéing, smoking or other cooking methods by portioning, breading, seasoning and/or marinating. Follows proper plate presentation and garnish set up for all dishes according to build sheets. Handles, stores and rotates all products properly. Labels and dates every prepped item, FIFO with no exceptions. Records all waste, spoilage and comped or refired food on the waste sheet every shift. Assists in food prep assignments during off-peak periods as needed. Handles high-volume nights — league nights, weekends and events — without dropping ticket times or quality. Opens or Closes the kitchen properly and follows the checklists and prep sheets for kitchen stations. Complete any other tasks or directives issued by your Manager or Superiors in a polite, timely and accurate manner. Attends all scheduled employee meetings and brings suggestions for improvement. Performs other related duties as assigned by the Kitchen Manager or manager-on-duty.
