Line Cook / Prep Cook The Line Cook / Prep Cook position supports daily food preparation and kitchen operations within a secure environment at Los Alamos National Laboratory (LANL). This role is responsible for preparing ingredients and menu items, maintaining a clean and organized kitchen, and ensuring food is prepared safely, consistently, and according to established recipes and standards. Key Responsibilities
Prepare ingredients and menu items according to established recipes, portion sizes, and preparation standards.
Perform daily prep work including washing, chopping, slicing, measuring, portioning, and assembling ingredients.
Cook and prepare food using grills, ovens, stovetops, fryers, and other commercial kitchen equipment.
Set up and maintain assigned workstations for efficient daily service.
Monitor food quality, freshness, presentation, and proper holding temperatures.
Follow proper food handling, storage, labeling, rotation, and temperature-control procedures.
Maintain clean and sanitary workstations, equipment, utensils, and food preparation areas.
Follow established opening, closing, cleaning, and kitchen checklists.
Assist with receiving, organizing, and properly storing food and kitchen supplies.
Monitor ingredient and supply levels and communicate restocking needs to kitchen leadership.
Minimize food waste by following proper portioning, preparation, and storage procedures.
Follow all food safety, sanitation, workplace safety, and company policies.
Follow all LANL access, security, safety, and site-specific procedures while working within the secure environment.
Maintain professional conduct and work cooperatively with kitchen, catering, and other operational staff.
Assist with additional kitchen, food preparation, and operational duties as assigned.
Requirements
Must successfully complete a pre-employment drug screening.
Must meet all requirements necessary to obtain and maintain the badge/access credentials required for the position.
U.S. citizenship is required for the LANL badging/access applicable to this position.
Previous line cook, prep cook, commercial kitchen, or food service experience preferred.
Must be able to follow recipes, preparation instructions, food safety procedures, and kitchen standards.
Must be dependable and able to work efficiently in a fast-paced kitchen environment.
Must be able to safely operate commercial kitchen equipment and utensils.
Must be able to stand for extended periods and regularly bend, reach, lift, carry, and move food, supplies, and kitchen equipment.
Must maintain cleanliness, organization, and attention to detail throughout the workday.
