  • Downtown Erie, PA Serafini's Trattoria is a family-owned Italian restaurant located at 417 State Street in downtown Erie .
Our kitchen focuses on house-made pasta, scratch cooking, fresh ingredients, and consistent execution. We are looking for an experienced and dependable Line Cook / Prep Cook who can contribute during service while also becoming a reliable part of our kitchen production team. This is an excellent position for someone who wants more responsibility than simply working one station. The right person will be cross-trained in both line execution and prep/production , giving them consistent opportunities to develop their skills and become a more valuable member of the kitchen team. What We're Looking For Previous professional kitchen experience Strong reliability and attendance Availability for a combination of prep and line shifts Night and weekend availability Ability to work independently and stay productive without constant supervision Strong organization and cleanliness Ability to follow recipes, yields, portions, and production standards accurately Willingness to learn multiple stations and production responsibilities A sense of urgency without sacrificing quality Line Responsibilities Set up and maintain a clean, organized, fully stocked station Cook menu items according to established recipes, portions, temperatures, and presentation standards Execute tickets accurately and efficiently during high-volume service Communicate clearly with expo and other cooks Maintain awareness of ticket times and service pacing Follow recipes and established procedures consistently Complete opening, closing, cleaning, and station responsibilities Assist other stations when necessary to keep service moving Maintain proper food handling and sanitation throughout the shift Prep & Production Responsibilities You will be cross-trained in our prep and production systems and expected to become capable of independently completing assigned production.
Responsibilities may include:
House-made pasta production Sauces and soups Meatballs and other batch production Portioning proteins and ingredients Vegetable and ingredient preparation Bread and other production Preparing ingredients and components for line service Following batch recipes and established yields Weighing, measuring, labeling, dating, and properly storing prepared products Maintaining appropriate pars and communicating low inventory Completing assigned prep lists within expected production times Following FIFO and minimizing unnecessary waste Maintaining clean and organized prep and storage areas What Success Looks Like A strong Line Cook / Prep Cook at

Arrives on time and ready to work Can be trusted to complete an assigned prep list without constant supervision Understands that completing production accurately and on time is part of the job Follows recipes instead of estimating or making unauthorized changes Produces consistent batches and portions Communicates early when product is running low or production may fall behind Keeps their station clean and organized while working Can execute their assigned line station during busy service Works with urgency without becoming careless Accepts coaching and corrects mistakes Helps the kitchen as a whole rather than viewing one station as their only responsibility Becomes increasingly proficient across both prep and line positions Qualifications At least 1 year of professional kitchen experience preferred Line-cook and/or high-volume prep experience strongly preferred Basic knife skills Ability to accurately follow written recipes Understanding of food handling, labeling, storage, and sanitation Ability to work efficiently both independently and as part of a team Ability to stand for extended periods Ability to lift up to 40 pounds ServSafe certification is a plus Experience with scratch cooking, fresh pasta production, Italian cuisine, sauté, grill, or high-volume batch production is especially valuable. Schedule This position may include a combination of daytime prep/production shifts and evening line shifts depending on experience, availability, and the needs of the kitchen. Weekend availability is strongly preferred. Employees who demonstrate reliability and proficiency across multiple areas of the kitchen may have opportunities for additional hours and advancement.
