Job Details About the role At Alessandro's, the fire is always on and the standards are always high. We cook with intention — wood-fired flavor, seasonal ingredients, and the kind of consistency that keeps guests coming back. We're looking for a lead line cook who sets the standard for the kitchen — someone who takes pride in their craft, respects the process, and helps run a focused kitchen where every plate matters, every night. What you'll do Lead the prep and execution of dishes with consistency, upholding Alessandro's established recipes, portions, and quality standards — from handmade pastas to wood-fired mains Oversee daily prep and mise en place across the line, making sure the team gets ahead of service without overproducing Set the tone for station setup: freezer pulls, par checks, and everything in its place before the first ticket drops Track inventory levels, flag shortages or low-stock items, and help plan orders with the kitchen team Enforce proper food storage practices — label, date, rotate, and hold at correct temperatures Guide the team through clean breakdowns and set up the next shift for success Maintain a clean, organized, and sanitary workspace throughout every service, and hold the team to the same standard Operate and care for kitchen equipment, including our wood-fired oven and related tools, and train others on proper use Collaborate with our bar team to support smooth, synchronized service Drive food cost controls through smart prep, thoughtful usage, and waste reduction Model and reinforce safe work practices and all health and safety standards Champion our sustainability practices and responsible kitchen operations Step in wherever needed and help the line adjust on the fly — this is a team kitchen, and you help lead it What we're looking for 3+ years of kitchen experience, with prior experience leading a station or mentoring cooks preferred Strong sense of organization, cleanliness, and personal accountability — and the ability to instill that same standard in others Comfortable working independently and leading a small, focused kitchen environment Sharp attention to detail in execution, portioning, and plating Calm and efficient under pressure — you elevate the people around you and keep the line steady during a rush Deep respect for systems, standards, punctuality, and consistency Natural communicator who can give direction clearly and kindly An appreciation for Italian cooking traditions and the craft behind wood-fired food is a plus
