About This Position Must be able to work both shifts: 8:00am - 1:00pm AND 3:00pm - 7:00pm (this does include some weekends and holidays) Must have previous lead and/or supervisor experience within a kitchen environment You will prepare a variety of food items following assigned work instructions and menus. You will report to a Food Service Director. This position is located onsite inside of a jail/correctional facility. Essential Functions/Main Responsibilities Prepare a variety of meats, seafood, poultry, vegetables and other food items for cooking in broilers, ovens, grills, fryers and a variety of other kitchen equipment. Know and comply with standard portion sizes, cooking methods, quality standards and kitchen rules, recipes and procedures. Follow assigned instruction to maintain levels of food products at line stations to assure smooth serving of food. Complete required production paperwork, while also assigning and supervising inmates in (as provided) in the completion of their required tasks. These could include food prep, serving, clean-up, pots, dishes, and sanitation (when applicable). Responsible for all aspects of controlling inventory. (when applicable) Maintain a clean and sanitary work station area. Following assigned recipes, prepares food items for broiling, grilling, frying, sautéing or other cooking methods by portioning, battering, breading, seasoning and marinating according to directions. Follow proper plate presentation and garnish set up for all dishes. Handle, store, label, and rotate all products in accordance to applicable state laws. Other responsibilities as determined by our needs. What You'll Need High School Diploma or GED and/or equivalent experience. Must be at least 18 years of age. At least one (1) year of relevant cooking experience required. Prior experience cooking in a cafeteria or large volume production facility. Prior experience in a kitchen or large cafeteria setting. Experience with safety procedures as typical in a cafeteria or food service environment. Qualifications:
High School Diploma or GED and/or equivalent experience. Must be at least 18 years of age. At least one (1) year of relevant cooking experience required. Prior experience cooking in a cafeteria or large volume production facility. Prior experience in a kitchen or large cafeteria setting.
