Job Description

Position Summary The Cook II is responsible for preparing and cooking a variety of hot and cold food items in a high-volume military dining facility at Fort Bliss. This role supports Blackstone Consulting, Inc. (BCI) operations by delivering quality meals in accordance with Army standards, food safety regulations, and established menus. Key Responsibilities Prepare, season, and cook a variety of foods including meats, vegetables, soups, and starches following standardized recipes and menus Operate kitchen equipment such as grills, ovens, fryers, slicers, and steamers safely and efficiently Ensure all food production meets Army quality standards, portion control requirements, and meal schedules Maintain strict adherence to food safety and sanitation guidelines (ServSafe, HACCP, and regulatory compliance) Assist with receiving, storing, and rotating food supplies using FIFO (First-In, First-Out) procedures Monitor food temperatures and ensure proper storage and holding conditions Support meal service lines and replenish food items as necessary during service periods Maintain a clean, organized, and sanitary work environment Collaborate with kitchen staff, supervisors, and dining facility management to ensure efficient operations Assist in training Cook I staff and food service workers when required Qualifications High school diploma or equivalent preferred Minimum of 2 years of commercial or institutional cooking experience (military, cafeteria, or high-volume kitchen preferred) Knowledge of large-scale food preparation and cooking techniques Familiarity with food safety regulations and sanitation standards Ability to follow recipes, production schedules, and standardized procedures Strong teamwork and communication skills Ability to work in a fast-paced, physically demanding environment Certifications Food Handler Certification (required) ServSafe Certification (preferred or required within specified timeframe) Physical Requirements Ability to stand for extended periods (8-10 hours) Lift and carry up to 40-50 lbs Work in hot, cold, and fast-paced kitchen environments Ability to perform repetitive motions (cutting, stirring, lifting) Work Environment Military dining facility (DFAC) at Fort Bliss May include early mornings, evenings, weekends, and holidays Structured, team-oriented environment with strict compliance standards Additional Duties Support special events, field feeding operations, or surge requirements as needed Maintain professionalism when interacting with military personnel and staff Follow all company policies and military installation regulations
