DESCRIPTION
Under the direction of the Black Bear Restaurant management at Indian Lodge this position performs complex (journey-level) food preparation work. Cooks food menu items when orders are received and prepares food for large group meals. Cleans kitchen, walk-ins, and work areas. Identifies areas in need of correction or improvement and makes recommendations for enhancement of operating efficiency. Reports on kitchen equipment in need of repair or replacement. Maintains inventory of food and supplies and prepares requisitions for needed items as appropriate. Completes daily reports. May provide guidance to others. Works under limited supervision, with considerable latitude for the use of initiative and independent judgment. Performs additional duties as assigned. Complies with all Agency, Division and Branch rules, regulations and procedures.
MINIMUM QUALIFICATIONS
Education:
Graduation from High School or GED.
Experience:
One year of experience in food preparation in a full-service restaurant, cooking for menu preparation, and groups.
Licensure:
Must possess or be able to obtain, within 30 days of employment, a valid State driver's license. Must have or be able to obtain within thirty days of employment a valid Food Handler Certification recognized by the Texas Department of State Health Services.
PREFERRED QUALIFICATIONS
Licensure:
A valid/current Department of State Health Services Food Handler Certificate.
KNOWLEDGE, SKILLS AND ABILITIES
Knowledge of restaurant operation, including quantity food preparation techniques and procedures. Knowledge of health and safety regulations, proper food temperatures, and safe food handling techniques. Knowledge of ordering inventory of grocery supplies. Knowledge of cooking and baking. Knowledge of basic mathematics. Knowledge of modified and calculated diet preparation methods. Skill in using MS Word, Excel, and Outlook. Skill in effective verbal and written communication. Skill in use and care of food preparation appliances and equipment. Skill in planning and providing guidance in reference to the work of others. Skill in training others. Skill in providing quality customer service in a courteous and professional manner. Skill in establishing and maintaining effective work relationships with co-workers and work-related contacts. Ability to analyze problems and recommend solutions. Ability to maintain inventory of food items and grocery supplies and to place orders, as needed. Ability to interpret and follow recipes. Ability to accurately follow instructions. Ability to work independently with little or no supervision. Ability to work as a member of a team. Ability to perform manual labor, including lifting supplies and materials up to 20 lbs. Ability to conduct work activities in accordance with TPWD safety program.
WORKING CONDITIONS
Required to work in a public hotel-type facility. Required to work 40 hours per week includes various schedules, with hours other than 8:00 a.m. to 5:00 p.m. and days off other than Saturdays, Sundays, and holidays, including the potential to work split shifts. Required to adjust to changing schedules. Required to work overtime, as necessary. Required to perform manual labor, including lifting supplies and materials up to 20 lbs. Must conform to agency work rules, safety procedures, and dress and grooming standards. May be required to operate a State vehicle. Non-smoking environment in State buildings and vehicles.
