Job Description

The Fryer Cook is responsible for producing consistent, high‑quality fried items while maintaining a clean, safe, and organized station. This position directly affects food quality, speed, and customer satisfaction.

•1. Station Setup & Opening Oil Level Check — Ensure oil is at fill line; top off if needed. Preheat Fryers — Set correct temps and allow full recovery. Prep Fries — Stock station to par levels. Dump Station Setup — Fresh paper, clean surface. Clean Baskets — No carbon buildup.

Trainer Notes:

Demonstrate proper oil fill line, show how to verify temperature recovery, and walk through station layout.

•2. Cooking Standards Stagger Drops — Prevent temp crashes. Follow Cook Times — No guessing; use SBK timing. Check Color & Crispness — Golden, not dark or soggy. Reject Bad Product — Never serve under/overcooked items. Season in Correct Area — Never over the fryer.

Trainer Notes:

Have trainee cook multiple batches and compare color, texture, and consistency.

•3. Oil Management Skim Oil throughout shift. Monitor Recovery after heavy drops.

Daily Filter:

Drain → Filter → Scrape pot → Brush elements → Refill. Full Oil Change (Every 3-5 Days): Drain → Boil‑out → Rinse → Dry → Refill → Test.

Demonstrate safe filtering, show carbon buildup, explain how oil quality affects food color.

•4. Communication & Workflow Coordinate with Line — Keep food flowing. Call Out Drops — Let expo know when batches are coming. Stay Ahead of Rushes — Maintain par levels.

$15.00
