Dough mixed and proofed in house, stretched by hand, sauce built from raw ingredients, every pie fired on stone. No par-baked crusts, no dough press, no shortcuts. We're looking for someone who already knows dough. You can feel when it's proofed right. You can stretch a round by hand at speed without tearing it or leaving a thick rim. You know how a stone deck behaves as it heats, cools, and gets hammered through a Friday rush — and you care that the last pie of the night looks like the first one. If that's you, keep reading. What You'll Do Dough and sauce Mix, portion, ball, and proof dough daily — adjusting for temperature and humidity, not just following a clock Hand stretch to consistent size and thickness Build sauces from scratch to spec, consistent batch to batch Taste and check every batch before it hits the line. If it isn't right, it doesn't get used The oven Fire and manage a stone oven, including temperature recovery during peak volume Launch, turn, and pull for a proper bake — good char, set cheese, cooked-through center Read the deck and adjust placement and timing as it shifts through service Daily cleaning and routine oven care Line and service Set up, run, and break down your station — prepped, stocked, and ready before service Build to recipe and portion spec at volume Hold ticket times through a rush without letting quality slip Communicate with the line, expo, and front of house Follow all food safety and health code standards; clean as you work, not just at close Rotate, label, and date product and help control waste What You Bring Required Pizza cook experience in a scratch kitchen Proven hand-stretching ability — consistent, and fast enough to hold a rush Experience making sauces from scratch Hands-on time on a stone-fired or deck oven Solid knife skills and a working understanding of prep, food safety, and cross-contamination Consistent, on-time attendance Preferred Food Handler certification, or willingness to get one in your first 30 days Working knowledge of fermentation and hydration and how they show up in the finished product High-volume kitchen or entertainment venue experience Who does well here Takes ownership of their station and their product Helps without being asked and doesn't leave a mess for the next shift Keeps a level head and a good attitude when it gets busy — the kitchen sets the tone for the building Takes feedback and applies it Schedule This role is built around our busiest service periods. Friday and Saturday evenings are required. Not preferred — required Weekday evening flexibility, with availability that can shift week to week Holidays and peak periods as scheduled If you can't reliably work weekend nights, this isn't the right role, and we'd rather know now than three weeks in.
