POSITION SUMMARY
The Mesero Line Cook plays a critical role in preparing and cooking menu items according to Mesero recipes, quality standards, and presentation requirements. This position works closely with the kitchen team to deliver consistent, flavorful, and beautifully presented dishes. Line Cooks must maintain accuracy and efficiency while supporting the fast pace of the kitchen during peak service periods.
KEY RESPONSIBILITIES STATION SETUP AND READINESS
Set up the assigned cooking station before service. Ensure required ingredients, utensils, and supplies are stocked and ready for use. Confirm that ingredients are fresh and properly stored. Check food temperatures and equipment before beginning production. Review assigned preparation and production needs. Communicate low-stock ingredients or missing supplies to the chef or manager. Maintain station readiness throughout the shift.
FOOD PREPARATION AND COOKING
Prepare and cook menu items according to Mesero recipes. Follow required cooking methods, portions, and preparation procedures. Prepare food accurately and within required ticket times. Use kitchen tools and cooking equipment safely. Coordinate the preparation of multiple items during high-volume service. Follow guest modifications and special instructions accurately. Communicate questions about recipes or orders to the chef or manager.
FOOD QUALITY AND PRESENTATION
Ensure each dish meets Mesero's food-quality standards. Confirm that food is properly cooked before service. Follow established portion and presentation standards. Inspect each completed dish for accuracy, appearance, and quality. Correct food-quality or presentation concerns before an item is served. Protect the freshness, flavor, and consistency of Mesero menu items. Notify the chef or manager of recurring product or preparation concerns.
SERVICE EXECUTION
Work with the kitchen team to maintain a smooth and efficient flow of service. Communicate clearly with Prep Cooks, other Line Cooks, expediters, and managers. Maintain speed and accuracy during peak service hours. Respond promptly to changing production and service needs. Assist other cooking stations when trained and directed. Support the preparation of complete and properly timed guest orders. Maintain a calm, professional, and team-focused attitude.
FOOD SAFETY AND STORAGE
Follow proper food-handling and storage procedures. Maintain food at required temperatures. Label, date, rotate, and properly store ingredients and prepared food. Follow first-in, first-out rotation procedures. Prevent cross-contamination during preparation, cooking, and storage. Follow required cooking, cooling, reheating, and holding procedures. Maintain all food-safety certifications required by applicable regulations. Report expired, damaged, or improperly stored products to the chef or manager.
CLEANLINESS AND SANITATION
Maintain a clean and organized workstation. Clean and sanitize cooking surfaces, utensils, equipment, and preparation areas. Complete required cleaning duties throughout the shift. Follow proper handwashing and glove-use requirements. Keep floors and work areas clean and free of hazards. Use cleaning chemicals according to established procedures. Report equipment, sanitation, or workplace-safety concerns promptly. Follow all health, safety, sanitation, and company requirements.
INVENTORY AND PRODUCT CONTROL
Monitor ingredient and supply levels at the assigned station. Restock the station as needed throughout the shift. Communicate shortages to the chef or manager. Use ingredients carefully and follow portion standards to reduce waste. Assist with inventory counts when requested. Protect food quality through proper handling and storage. Report damaged products, unusual waste, or product-quality concerns.
CLOSING RESPONSIBILITIES
Break down the assigned station after service. Properly cool, label, date, and store remaining food. Clean and sanitize equipment, surfaces, utensils, and work areas. Restock ingredients and supplies for the next service period. Complete assigned closing and cleaning duties. Communicate unresolved equipment, inventory, or food-quality concerns to the chef or manager.
QUALIFICATIONS
Previous Line Cook experience or similar experience in a fast-paced, full-service kitchen is preferred. Strong understanding of cooking techniques, food safety, and kitchen operations. Ability to follow recipes, portions, and presentation standards. Ability to work efficiently under pressure during high-volume service. Strong attention to food quality and order accuracy. Excellent communication and teamwork skills. Ability to safely operate applicable kitchen equipment. Must maintain all food-safety certifications required by applicable regulations. Flexible availability, including mornings, evenings, weekends, and holidays.
PHYSICAL REQUIREMENTS
Ability to stand for extended periods. Ability to bend, reach, twist, and perform repetitive cooking tasks. Ability to safely use knives, cooking equipment, and kitchen tools. Ability to work around heat, steam, hot surfaces, sharp tools, and cold-storage areas. Ability to lift and carry up to 50 pounds. Ability to work in a fast-paced kitchen environment.
DFW AIRPORT REQUIREMENTS
Must successfully complete required employment and airport background screening. Must obtain and maintain all required DFW Airport identification and security credentials. Must comply with all airport security, access, and workplace requirements.
Pay:
$16.00 - $20.00 per hour Expected hours: 10.0 - 40.0 per week
