Hugo's is a chef-driven, Mediterranean-inspired restaurant centered around our wood-fired kitchen, scratch-made food, seasonal ingredients, and genuine hospitality. From hand-stretched pizzas coming out of our wood-burning oven to composed entrées, shareable plates, sauces, and seasonal features, our culinary team plays an essential role in the experience we create for every guest. As our culinary team continues to grow and evolve, we're looking for people who are passionate about food, eager to learn, and committed to doing things the right way. You don't need to know everything on day one—but you do need to care about your work, your teammates, and the food you put on the plate. If you thrive in a collaborative, fast-paced kitchen and take pride in being part of a strong team, we'd love to meet you. What You'll Do Execute menu items with consistency, accuracy, and attention to detail. Support daily mise en place, including preparing produce, proteins, sauces, dressings, garnishes, and other components. Maintain a clean, organized, stocked, and efficient workstation before, during, and after service. Safely and confidently operate kitchen equipment, knives, and tools according to training and established standards. Work collaboratively with chefs, fellow culinary team members, and the front-of-house team to deliver smooth and timely service. Uphold food safety, sanitation, labeling, storage, and product-rotation standards. Cross-train throughout the kitchen, including prep, hot-line stations, and our wood-burning oven. Learn and execute new menu items, seasonal features, and specials as our menu continues to evolve. Assist with in-house and off-site catering, private events, and special dinners as needed. Support the training and onboarding of new team members by sharing knowledge, reinforcing standards, and contributing to a positive kitchen culture. Take ownership of your station and contribute wherever needed to help the entire team succeed. What You Bring Previous experience in a professional kitchen or food-service environment is preferred. Foundational culinary skills, including safe knife handling, proper food preparation, sanitation, and organization. The ability to work efficiently in a fast-paced environment while maintaining quality and attention to detail. Reliability, professionalism, and a strong work ethic. A team-first mentality and willingness to communicate, help others, and accept feedback. Curiosity and a willingness to learn new ingredients, techniques, recipes, and systems. The ability to take direction while also developing greater independence and ownership of your station. Experience with high-volume service, scratch cooking, wood-fired ovens, or catering is a plus, but not required.
