Executive Chef and Operations Management Position Summary Encore Catering is seeking a professional, hands-on Back of House Captain to support both kitchen production and off-site event execution. This position assists the culinary team with prep cooking, travels to event venues with Encore Catering, and helps manage the onsite back of house setup, plating, cleaning, and breakdown. The ideal candidate is organized, dependable, professional, and comfortable working in a fast-paced catering environment. This role requires strong communication, attention to detail, and the ability to lead by example while actively working alongside the culinary and operations teams. Primary Responsibilities Kitchen Support Assist the culinary team with food preparation and basic prep cook responsibilities Follow recipes, production sheets, portioning standards, and food safety procedures Assist with packing food, smallwares, equipment, and supplies for off-site events Confirm assigned event items are prepared, packed, labeled, and ready for transport Maintain a clean, safe, and organized kitchen workspace Onsite Event Responsibilities Travel to event venues with the Encore Catering team Assist with unloading vehicles and setting up the onsite kitchen and back of house areas Review the event timeline, BEO, menu, guest count, and service expectations Organize food, equipment, plating areas, hot boxes, refrigeration, and sanitation stations Assist chefs with final food preparation, plating, garnishing, and buffet replenishment Help coordinate plating lines and communicate timing with the Chef and Event Captain Maintain food quality, presentation, portioning, and temperature standards Keep the back of house area clean, safe, professional, and organized throughout the event Assist with dishwashing, trash removal, equipment cleaning, packing, and event breakdown Confirm Encore equipment, rentals, food, and supplies are properly accounted for before departure Assist with loading vehicles and returning equipment to the Encore facility Leadership and Professional Standards Lead by example and remain actively involved in all assigned responsibilities Communicate professionally with chefs, captains, servers, venue staff, vendors, and clients Help keep the back of house team organized and focused on the event timeline Identify and report food safety, equipment, staffing, or execution concerns promptly Remain calm, flexible, and solution-focused when event needs change Maintain a professional appearance and follow Encore's uniform and conduct standards Protect client confidentiality and avoid discussing internal issues in guest areas Qualifications Previous catering, banquet, restaurant kitchen, prep cook, or event experience preferred Previous lead or supervisory experience preferred Basic knife skills and food preparation experience Knowledge of food safety, sanitation, and temperature-control standards Ability to read and follow menus, recipes, production sheets, and BEOs Strong communication, organization, and time-management skills Professional, dependable, and comfortable working as part of a team Valid driver's license and clean driving record required Ability to safely drive Encore vehicles when assigned Reliable transportation to the Encore facility and assigned work locations Food safety certification preferred or required within the designated training period Schedule Requirements Part-time, seasonal position based on event volume Must be available for a flexible schedule, including early mornings, evenings, weekends, and holidays Shift length and weekly hours will vary depending on business needs Must be able to work both onsite at Encore Catering and at off-site event venues Physical Requirements Ability to stand and work for extended periods Ability to lift, carry, push, and pull up to 50 pounds Ability to safely load and unload vehicles, carts, food carriers, and event equipment Ability to bend, reach, climb stairs, and work in indoor and outdoor event environments Ability to work around hot equipment, cold storage, water, and active kitchen areas The Back of House Captain plays an important role in ensuring every event is properly prepared, professionally executed, and fully cleaned and packed before the team leaves the venue.
