Variable — production days scheduled around event and retail demand; some early-morning shifts Position Summary Tickett is looking for a hands-on Ice Cream Production Associate to produce our small-batch ice cream at the Worcester Food Hub commissary. This role takes our freeze-dried flavor pre-mix through reconstitution and batch freezing, following Tickett's SOPs to consistently deliver the texture, flavor accuracy, and quality our brand is built on. This is a production role, not a customer-facing role — precision, consistency, and food safety discipline matter more than speed. Key Responsibilities Reconstitute freeze-dried ice cream pre-mix per Tickett SOPs, verifying batch codes, flavor identity, and dairy vs. non-dairy separation before production begins. Operate the batch freezer to churn reconstituted mix into finished ice cream, monitoring overrun, draw temperature, and texture against SOP targets. Portion and pack finished product into pints, bulk tubs, or event containers as specified by the day's production plan. Label all finished product accurately, including flavor name, batch/lot code, production date, and allergen statements (e.g., "Contains milk"). Maintain strict separation of dairy and non-dairy production runs, including equipment cleaning between runs per SOP. Clean and sanitize the batch freezer, work surfaces, and utensils before, during, and after production per food safety protocol. Monitor and log cold storage temperatures for raw pre-mix, work-in-process, and finished goods. Track inventory usage of pre-mix and packaging, flagging low stock or damaged/leaking packaging (e.g., 3-gallon boxes) to the Production Lead. Follow all Worcester Food Hub commissary rules and shared-space protocols. Report any equipment malfunction, quality deviation, or SOP exception immediately. Qualifications Prior experience in food production, ice cream/dairy manufacturing, bakery, or a commercial kitchen preferred. Comfortable operating commercial kitchen equipment; batch freezer experience is a strong plus but not required — training provided. Food Handler certification (or willingness to obtain within 30 days of hire). Able to follow written SOPs precisely and document production accurately (batch logs, temperature logs). Detail-oriented, especially around allergen handling and dairy/non-dairy separation. Reliable and punctual; able to work variable shifts including early mornings ahead of events. Comfortable working independently after initial training. Physical Requirements Able to lift up to 50 lbs (pre-mix boxes, finished product tubs). Able to stand for extended periods and work in a commercial kitchen environment, including walk-in cold storage. Comfortable working around commercial refrigeration and freezing equipment. Compensation Hourly rate commensurate with experience. Reporting Structure Reports directly to the Founder / Production Lead. Coordinates with the Events Booking Manager and truck crew on production volume needed for upcoming activations
