POSITION SUMMARY
As a Food Production Assistant at Ceremony Coffee, you will assist with all aspects of seasonal menu production for our cafes per Ceremony recipes and standards. Adhering to Health Department and Ceremony Coffee food safety and sanitation standards is of the utmost importance. You must be committed to quality and consistency, which are important for delighting customers and creating repeat business. This position is based out of our Central Kitchen in Baltimore City. CORE RESPONSIBILITIES + ESSENTIAL FUNCTIONS
Prepare food menu items to the specifications of Culinary Manager Willingness to create and change menu options as directed by Culinary Manager Assist in menu planning, bringing new and exciting ideas to fruition Plan and execute daily goals with production team members, prioritizing based on level of importance Follow recipes without deviation Convert recipes for smaller or larger portions when necessary Assist with production of house-made syrups and signature beverage ingredients Ensure that kitchen, food prep areas, and food storage areas meet all safety, cleanliness and organization standards Follow Health Department and food handling procedures; maintain a good hygienic practice Monitor product freshness, replace or rotate product to prevent spoilage Properly label and store prepped items Assist with ordering process Follow established receiving procedures when processing deliveries of produce, meat and dry goods Maintain strict inventory control Maintain knowledge of new ingredients and seasonal menu items Take full responsibility for thoroughly cleaning and closing the shared kitchen
QUALIFICATIONS AND REQUIREMENTS
Two years experience in a professional kitchen or equivalent culinary coursework or certificate preferred (culinary students welcome) Must be willing to make a 6-month commitment, minimum Must have knowledge of basic cooking skills and be comfortable following a recipe Very good knife skills preferred Ability to multi-task Attention to detail with clear communication skills - must be able to follow written, verbal or diagrammed instructions accurately Good organization and time-management skills Self-motivated; able to work independently and stay on task Must work well under pressure in a fast-paced environment with a sense of urgency and purpose Ability to think on the fly and restructure tasks as needed Passion for people and service Reliability, punctuality, and professional conduct and appearance Capable of accepting and implementing constructive feedback Capable of learning new systems/methods and developing new habits Capable of maintaining a positive, can-do attitude Must be able to stand for shift duration and lift at least 50 pounds regularly
