We're part of Armor Brand, a growing multi-concept food and beverage company that includes two Armor Coffee Co. locations. We take the beer seriously without taking ourselves too seriously. The role We're looking for an experienced Head Brewer to own production from raw materials to the glass. This isn't a "come in and follow the manual" position. You'll have real ownership over what goes in the tank, what goes on the menu, and how we continue to build this program. You'll report to the Director of Operations and work closely with the GM and front-of-house team. What you'll own Production Full brewing operations: mashing, lautering, boiling, fermentation, conditioning, and packaging Raw material sourcing and ordering — grain, hops, yeast, adjuncts, CO2, chemicals, and packaging materials Recipe development and maintenance across our core and seasonal lineup Batch record keeping and quality control (ABV, gravity, sensory evaluation) Equipment maintenance, sanitation, and cellar cleanliness TTB Brewer's Report of Operations and TABC compliance Creative Collaboration on can art design and coordination with print vendors through COLA approval Team Oversight of any cellar or packaging staff Contribution to the weekly production schedule What we're looking for 3+ years of professional brewing experience, at least 1 year in a lead or head brewer role Solid foundation across multiple styles — we don't just make one thing Experience managing raw material ordering and vendor relationships Familiarity with TTB reporting and COLA process Comfortable working within a small, fast-moving team where titles don't excuse you from getting your hands dirty Strong communication skills — you'll interact with the ops team, the GM, and occasionally guests
