Director of R&D and Chocolatier Role Summary:
The role would be in Rockwall but would start out of Addison, TX from now until the ChocXO lab is ready (expected early 2027). This a full-time role, Monday-Friday, daytime hours with a flexible morning start time, typically 8:00-9:00 AM until 4 or 5pm. Key Responsibilities Temper couverture to precise time-and-temperature curves; mold, demold, and decorate finished chocolates and confections to spec Produce ganaches, caramels, and fillings to formula, controlling water activity, viscosity, and cook temperatures for shelf-life stability Run molded bonbons, enrobed items, and the broader Yelibelly and ChocXO line, holding shell thickness, fill weight, and gloss within tolerance Execute recipes, batch records, and SOPs with repeatable accuracy batch over batch Lead execution of high-volume corporate and custom orders, sequencing work to hit ship dates without compromising quality Finish, inspect, and package product against appearance and weight standards prior to release Maintain tempering equipment, molds, and work areas in production-ready condition; escalate deviations and maintenance needs Work in full compliance with GMPs, SQF requirements, allergen controls, and sanitation procedures Provide hands-on floor support and cross-functional coverage during peak production periods
Required Knowledge, Skills and Abilities:
Bachelor's degree in food science, or related degree, from a recognized university. Chocolatier experience or working experience with chocolate product development. 3 years of technical experience in a food processing / manufacturing or relevant CPG industry environment ideally chocolate. Strong knowledge of manufacturing regulations; safety, quality, SQF, GMPs, and SOPs. Experience working with a variety of food lab equipment and software programs including nutritional/ingredient software. Ability to build strategic relationships with key stakeholders across the operation to deliver results. Able to identify opportunities and exhibit high energy and a willingness to be involved. Possess a firm knowledge in food chemistry and processing, chocolate manufacturing or bakery experience desirable. Brings a solution-focused approach to innovation and problem solving. Excellent organizational skills, detail oriented with a high degree of initiative and flexibility. Excellent communication skills in English

Can follow recipes, instructions, and established production standards precisely Has strong attention to detail and takes pride in presentation Works efficiently while maintaining quality and consistency Is dependable, organized, and comfortable working as part of a small team Working Conditions Turning at the waist Able to work on foot for long periods of time and performing repetitive work Occasionally climbing ladders Wear protective clothing, such as coats, hair nets and safety shoes Exposure to machinery sounds and loud noise levels Ability to push, pull, bend, and lift (up to 25kg) Doesn't mind doing everything from fine chocolate work to packaging and cleaning when the job needs to get done
