Graveyard Pit Cleaner - BBQ Pit & Fire Prevention Position Summary The Graveyard Pit Cleaner is responsible for the thorough nightly cleaning of the BBQ pit and surrounding pit area to remove grease, ash, food debris, and other buildup that could create a fire hazard . This is a physically demanding position involving heavy lifting, moving equipment, extensive scrubbing and cleaning, and mopping the restaurant at the end of the shift . Proper cleaning of the pit is a critical safety responsibility and must be completed thoroughly each shift to help prevent grease buildup and reduce the risk of fire. Primary Responsibilities Thoroughly clean the BBQ pit every scheduled shift according to restaurant procedures. Remove accumulated grease, fat, ash, soot, carbon, and food debris from the pit and surrounding areas. Clean pit grates, racks, trays, interior surfaces, and removable pit components. Pay particular attention to areas where grease and debris accumulate and may create a potential fire hazard. Move and lift heavy pit components, grates, racks, containers, cleaning equipment, and other items necessary to properly access and clean the pit. Clean underneath, and around the pit and related equipment. Clean and degrease floors, walls, and surrounding surfaces. Inspect the pit while cleaning for excessive buildup, damage, cracks, loose components, or other potential safety or fire hazards. Immediately report equipment damage, excessive buildup, or any condition that may present a fire or safety hazard to management. Safely remove and dispose of grease, ash, food debris, and other pit waste according to restaurant procedures. Use only restaurant-approved cleaning chemicals, equipment, and procedures. Follow all safety procedures regarding hot surfaces, ash, embers, grease, chemicals, and heavy equipment. Wear all required personal protective equipment (PPE). Keep the pit area organized and free from unnecessary combustible materials. Complete all assigned pit-cleaning duties before leaving. Sweep and thoroughly mop the restaurant floors at the end of the graveyard shift , including assigned kitchen, back-of-house, and restaurant areas. Properly clean and store mops, buckets, brooms, squeegees, and other cleaning equipment after use. Complete and sign the Pit Cleaning & Fire Prevention Checklist after each shift. Notify management if any required cleaning cannot be completed before leaving. Perform additional cleaning and related safety duties as assigned. Physical Requirements This is a physically demanding position that requires heavy lifting and repetitive physical activity . The employee must be able to: Lift, carry, push, and pull heavy equipment, pit components, cleaning supplies, and waste containers. Frequently bend, kneel, squat, reach, twist, push, pull, and scrub. Stand and walk for extended periods. Perform repetitive and strenuous cleaning activities. Safely work around grease, ash, soot, water, cleaning chemicals, and equipment that may retain heat. Move equipment or components as necessary to thoroughly clean assigned areas. Critical Safety Responsibility Thorough pit cleaning is an essential function of this position. Grease, ash, carbon, and other combustible buildup can increase the risk of fire. Required pit-cleaning procedures must be completed fully and accurately each shift. Failure to complete required cleaning, intentionally skipping required cleaning areas, or falsely documenting that cleaning was completed may result in corrective action, up to and including termination, consistent with company policy. Schedule Graveyard/overnight shift. The employee is responsible for completing all assigned pit-cleaning, fire-prevention, and end-of-shift floor-cleaning responsibilities before the shift is considered complete.
