Job Description

JOB OVERVIEW
The Cook 2 - Overnight Shift is responsible for maintaining overnight culinary operations and ensuring the kitchen is fully prepared for the following day's service. This includes completing all mise en place for the breakfast buffet, setting up stations, and performing additional daily preparations while upholding established quality standards. The Cook 2 must be proficient in all fundamental cooking techniques and capable of preparing menu items for outlets or banquet events as required. During the graveyard shift, this role also supports essential overnight tasks such as restocking, and ensuring all kitchen areas meet sanitation and safety standards before morning staff arrives.
WORK REQUIREMENTS
Cook 2 Responsibilities Prepare all dishes and mise en place according to recipe cards, maintaining consistent quality and presentation. Maintain a clean and organized kitchen by thoroughly cleaning prep areas before and after use and ensuring all stations and critical equipment are sanitized. Collaborate with fellow cooks and team members to ensure smooth and efficient kitchen operations. Review and complete the daily prep list in a timely and organized manner. Support banquet preparation and execution as needed, ensuring readiness for scheduled events. Execute all menu items for assigned stations in outlets or banquet kitchens with accuracy and efficiency. Perform graveyard specific duties such as restocking, rotating product, labeling, and completing deep cleaning tasks to prepare the kitchen for the next day's service. Communicate any product shortages, equipment issues, or safety concerns to supervisors promptly. Position Requirements High school diploma or GED. Proven culinary experience in a professional kitchen environment. Strong desire to provide exceptional service to guests and internal partners. Complete understanding of hospitality industry standards, policies, and sanitation procedures. Proficiency with computer systems including, but not limited to, Micros and Microsoft Office Suite. Demonstrated organizational skills, attention to detail, and the ability to make efficient, productive decisions. Prior experience in a 4 Diamond rated hotel is preferred. Valid driver's license required. Ability to speak, read, and write English; fluency in additional languages is preferred. Flexible availability, including the ability to work overnight graveyard shifts, weekends, and holidays as required by business needs.
PHYSICAL REQUIREMENTS
While performing the duties of this job it will require to: Must be able to tolerate temperature changes from hot to cold and cold to hot. Must be able to tolerate noise and vibration and a variety of physical conditions such as proximity to moving mechanical parts, electrical currents, working on scaffolding and high places. Must be able to tolerate atmospheric conditions, such as fumes, orders, dust, mists, gasses and/or poor ventilation. Sit, stand, walk, stoop, kneel, crouch, or crawl occasionally. Frequently use hands for keyboard and arms to reach. Heavy work - Occasionally lift and/ or move up to 50lbs of force. Light work - Frequently lift and move up to 10lbs. May be required to lift trays of food or food items weighing up to 30 lbs. occasionally. Must be able to push and pull carts and equipment weighing up to 250 lbs. frequently
