About Us:

Bread, Espresso & is a renowned bakery cafe brand in Japan, with 37 locations nationwide, and recently opened its first U.S. location in Redondo Beach, California this past January. We offer both take-out and in-dining menu items, including a wide selection of breads, pastries, sandwiches, plated dishes, and cafe beverages. As our US operations continue to grow, we are seeking a talented and motivated Assistant Chef to support our culinary program.

Position Overview:

As an Assistant Chef, you will work closely with the Head Chef to oversee kitchen operations, ensure product quality, and support the development of new menu items. This role includes hands-on food preparation, production management, food and relevant cost control, kitchen staff scheduling, ordering of ingredients, and maintaining high operational standards. You will play a key part in maintaining consistency across all dishes and supporting the culinary team's performance and growth. This is a leadership position suited for individuals who are highly organized, proactive, ambitious and passionate about Japanese bakery/cafe style cuisine. Assistant Chef Duties and Responsibilities Kitchen Operations & Food Production Support daily kitchen operations, ensuring smooth and efficient workflow. Prepare and cook menu items according to established standards and recipes. Maintain consistent quality, taste, and presentation across all dishes. Train and guide kitchen staff in cooking techniques, preparation standards, and safety practices. Oversee food safety, sanitation, and kitchen cleanliness. Ordering & Inventory Management Monitor ingredient and supply inventory levels. Place and manage orders with vendors to ensure timely and accurate stock replenishment. Track product usage and reduce waste through efficient planning. Communicate closely with suppliers and maintain positive working relationships. Cost Management & Operational Efficiency Assist with food cost calculation, portion control, and waste reduction strategies. Review vendor pricing and explore cost-saving opportunities without compromising quality. Support the Head Chef and management team in maintaining profitable kitchen operations. Menu & Product Development Collaborate with the Head Chef to develop new menu items, seasonal dishes, and specials. Coordinate and conduct tastings, ingredient testing, and recipe refinement. Analyze customer feedback and adjust product offerings as needed. Team Leadership & Scheduling Assist in preparing staff schedules based on business needs and labor targets. Support onboarding and training of new kitchen team members. Provide leadership, motivation, and constructive feedback to the culinary team. Ensure a safe and positive working environment. Assistant Chef Requirements and Qualifications 3+ years of professional kitchen experience required; supervisory or lead cook experience preferred. Strong understanding of food preparation, cooking techniques, and kitchen operations. Foundational understanding of Asian styled cuisine/baked items with high level of interest to learn more Experience with ordering, vendor management, and cost control highly preferred. Ability to develop new recipes and contribute creatively to the menu. Strong organizational and scheduling abilities. Excellent communication and leadership skills. Ability to work a flexible schedule including early mornings, weekends, and holidays. Knowledge of food safety regulations and safe food handling practices. Reliable, proactive, and able to work independently with minimal supervision. Can lift up to 20 lbs of items Can commute to workplace (1212 S. Pacific Coast Hwy, Redondo Beach) Experience working for an Asian bakery (not limited to Japanese) preferred Open-minded towards the possibility of participating in training, in Japan, at our brand HQ Compensation Employment type:

Full-Time Compensation:

$45,000-69,000/annual (
