Faidley's Seafood, a fifth-generation family-owned institution established in 1886. Originally starting as two stalls in Baltimore's Lexington Market, the brand has evolved into a world-renowned culinary destination celebrated for its "Gold Standard" jumbo lump crab cakes. Located in the heart of Catonsville, this latest expansion features a full-service restaurant and bar, raw bar, and event space. Set within a meticulously restored historic building, The Fishmonger's Daughter offers a sophisticated yet approachable dining experience defined by the excellence of our family's traditions. Position Overview Our pastry program emphasizes refined yet approachable desserts, house-made components, seasonal ingredients, and careful technique. The Pastry Assistant plays a vital role in maintaining consistency, quality, and presentation standards while supporting menu development and production. This position requires precision, organization, creativity, and a strong understanding of classic pastry fundamentals. Essential Duties and Responsibilities The essential functions include, but are not limited to the following: Production & Preparation Prepare desserts, baked goods, and plated components according to established recipes Produce house-made items including creams, custards, ganache, sauces, doughs, and laminated products Assist with ice creams, sorbets, and frozen desserts as needed Maintain accurate labeling, dating, and storage procedures Follow production schedules to ensure proper par levels Plating & Service Support Execute plated desserts during service with precision and consistency Ensure garnish, temperature, and presentation standards are met Communicate effectively with line cooks and expediters during service Quality & Technique Maintain high standards of sanitation and food safety Follow recipes precisely and maintain portion control Monitor product quality and shelf life Support seasonal menu changes and R D as directed Organization & Cleanliness Keep pastry station clean, organized, and stocked Follow FIFO procedures Assist with inventory and ordering as needed Minimum Qualifications (Knowledge, Skills, and Abilities) Previous pastry or baking experience required Strong understanding of pastry fundamentals and classic techniques Ability to work independently and as part of a team Strong organizational and time management skills Commitment to consistency and attention to detail Preferred Qualifications Passion for seasonal ingredients and thoughtful sourcing Interest in classic and historic dessert traditions Creativity balanced with respect for technique Calm and focused under pressure Desire for continuous learning and professional growth

Must be available to work evenings, weekends, and holidays as required.
