Key Responsibilities Cooking operations: Operate smokehouse equipment to cook products to lethality, following USDA Appendix A and Appendix B requirements.
Temperature monitoring:
Ensure products reach required cooking temperatures and cooling temperatures; verify all setpoints are achieved.
Documentation:
Record cooking cycles, product temperatures, cooling data, and lot/batch codes for traceability and regulatory compliance.
Quality assurance:
Confirm product consistency, texture, and flavor meet company standards.
Compliance:
Adhere strictly to USDA food safety guidelines and Mitty's Foods' internal procedures.
Communication:
Coordinate with production managers and other operators to maintain smooth workflow and accurate reporting.
Safety and sanitation:
Follow all food safety, hygiene, and workplace safety protocols to maintain a clean and compliant environment.
Qualifications Experience:
Prior experience in food production, meat processing, or smokehouse operations preferred.
Technical knowledge:
Familiarity with USDA Appendix A and Appendix B lethality and cooling requirements.
Attention to detail:
Strong focus on accurate documentation and monitoring of cooking/cooling setpoints.
Communication skills:
Clear and effective communication with supervisors and team members.
Physical requirements:
Ability to lift up to 50 lbs, stand for extended periods, and work in a hot, fast-paced environment.
Pay:
$18.00 - $32.00 per hour Expected hours: 45.0 per week
