Based on experience and demonstrated skills An established Kansas City area barbecue restaurant is hiring an experienced, dependable pitmaster to lead barbecue preparation and smoking operations. We're looking for someone who takes pride in their craft and consistently delivers great flavor, tenderness, and quality. Responsibilities Trim, season, and smoke brisket, pork, ribs, chicken, and other barbecue meats. Manage smokers, fires, temperatures, and cooking schedules. Plan production to meet customer demand and minimize waste. Maintain consistent and adhere to recipes, portions, and presentation. Monitor meat inventory and communicate ordering needs. Maintain food safety standards and clean, organized work areas. Train and support kitchen staff. Work with ownership to maintain customer favorites and improve quality. Qualifications Professional barbecue or commercial smoking experience; three or more years preferred. Strong knowledge of meat preparation, wood selection, fire management, and smoking techniques. Ability to produce consistent barbecue in a busy restaurant. Dependable, organized, and able to communicate clearly. Available for early mornings, weekends, and shifts needed for production. Able to perform commercial kitchen duties, with reasonable accommodation. Food safety certification preferred, or willingness to obtain it. Must have experience working in a high-volume environment. Experienced in a variety of kitchen stations and multiple cooking styles Must be able to trim and portion cuts of meat. Read, write, and speak English fluently, Spanish is a plus.
