In this role, you will oversee daily operations: restaurant, member lounge, snack bar, banquets, and member events. Manage staff training and development, and drive operational excellence. Job Description Works primarily a swing shift and oversees lunch and dinner operations. Makes sure staff are punctual, and take their meal breaks in a timely manner. Conducts daily pre-shift communication with service staff. Ensures all staff have received appropriate communication. Coaches team members on service and customer engagement. Conducts orientation training, 30 - 60-90-day reviews. Works closely with leads to be sure all staff are working together for the same goal. Provides areas for improvement, and metric goals for them to attain. Uses labor cost efficiently. Runs a skeleton crew on slow periods, with management team bartending and serving to minimize cost. Cross trains staff to learn new positions, and work in banquets and restaurant operation for optimal staffing. Works closely with HR to ensure all hiring, firing and discipline measures meet Club standards. Monitor revenue and payroll vs budget and adjust as needed. Prepare variance report at the end of the month to explain reason for variance to budget.
Follow progressive discipline model:
verbal, written, suspension, termination. All terminations must be reviewed with HR before dismissal. Ensures all laws are consistently followed, including wage, food safety, responsible bar service. Makes sure staff are all certified in safe food handling and responsible bar service training. Schedules staff appropriately to maximize productivity while delivering the customer experience. Avoids unnecessary overtime. Maintains payroll% in targeted zone. Completes monthly inventory for both food and beverage items to accounting. Completes end of the month reports in a timely manner. Completes weekly order of food, beverage, and general supply requests. Completes monthly variance report for ownership, with written explanations for large variances. Provides weekly communication of Food and Beverage news and highlights to members. Follows up promptly on all member requests for reservation arrangements for larger parties 10-25 people. Will work with members to ensure maximum revenue and service opportunity. Closes the restaurant, bar nightly and secures the club property. Oversees banquet operations working closely with catering sales, chef, and Assistant Banquet Manager. Completes an annual budget for food and beverage each year. Submits annual capital requests as needed.
QUALIFICATIONS AND REQUIREMENTS
Possesses strong leadership skills, getting the most out of the staff they lead. Minimum of 3 years of food and beverage management and supervisor experience. Prior Club experience preferred. Experienced trainer in formal dining, high volume casual dining, and banquet service. Knowledgeable in wine and spirts, craft cocktails, and bar operations Experienced at reading monthly financial profit and loss reports, and reporting explanation of variances. Mut be an excellent communicator both verbally and written.
Excellent with customer service skills:
reading and touching tables, service recovery, etc. Experienced in servicing banquet meetings, weddings, and social events. Must be organized, able to multitask, and take pride in their follow up. Highly motivated to deliver the customer experience and develop team members to reach their full potential. Must be able to multitask and handle stressful situations.
