Responsible for supporting the VP of Food and Beverage in all aspects of food beverage quality, cost control, and completing inventories. Respond to all inquiries regarding the financial performance of the food and beverage department. Monitor and ensure that food and beverage operating procedures are met on a consistent basis. Communicate effectively with front of house management and staff. Oversees the flow of beverage service on the gaming floor and at all property bars. Provides day to day leadership direction to the Assistant Food and Beverage Managers and FOH team. Demonstrate the ability to perform the duties of all restaurants, bars and service wells. Monitor and control FOH labor within the department. Maintain adequate coverage in all outlets based on business demands. Responsible for hiring, training, evaluation, and corrective counseling of FOH food and beverage team members. Ensures all team members follow recipes, measurements, quantities, and other information so each item served can be duplicated consistently. Ensure all prep items are made to approved standards. Confirms that all opening and closing checklists are adhered to and product(s) stored and secured. Inspects serving areas to ensure observance of safe, sanitary handling practices. Make certain all product(s) is placed and restocked in designated areas. Maintain a solid knowledge of all food and beverage products and ensure all products are properly rotated. Immediately research and resolve any malfunctions of equipment to ensure optimum operation and minimal down time. Inspects all restaurants, bars and service areas to ensure all products are properly labeled and dated to ensure safekeeping and sanitation. Ensures all food and beverage team members are using all cleaning equipment, chemicals, and sanitizing products in accordance with all MSDS sheets and departmental standards.EDUCATION AND EXPERIENCE
Minimum 5 years previous management experience in both beverage and food service preferred. High school diploma or its equivalent. Must be 21 years of age or older. Must pass all required pre-screening and background checks. Internal candidates must meet the eligibility requirements as provided in the Transfer and Promotion policy. Ability to work a variety of shifts, this includes day, swing, late-night, weekend, and holiday shifts as scheduled. Must be able to obtain and maintain a valid Kentucky gaming/racing license.
